Brazilian Grilled Flank Steak image

Steps:

  • Preheat grill to high.
  • To prepare steak, combine garlic, hot pepper, oil and salt in a small bowl. Rub the mixture on both sides of steak.
  • To prepare salsa, combine hearts of palm, tomatoes, onion, hot pepper, cilantro, vinegar and salt in a medium bowl.
  • Reduce grill heat to medium and grill the steak 4 to 6 minutes per side for medium-rare.
  • Transfer to a cutting board, tent with foil and let rest for 5 minutes.
  • Cut the steak across the grain into thin pieces. Serve with the salsa.

2 lbs flank steaks
6 garlic cloves, minced
1/2 small hot pepper, such as jalapeno or 1/2 small serrano pepper, minced
2 teaspoons extra virgin olive oil
1/4 teaspoon kosher salt
1 (14 ounce) can hearts of palm, drained, halved lengthwise and thinly sliced
4 medium tomatoes, chopped
1/2 cup red onion, chopped
1/2 small hot chili peppers, such as jalapeno or 1/2 small serrano pepper, minced
1/4 cup fresh cilantro, chopped
2 tablespoons red wine vinegar
1/4 teaspoon kosher salt

Brazilian Flank Steak with Fresh Chimichurri and Fried Yucca image

Steps:

  • Marinate the steak with the Worcestershire sauce, pepper and coarse salt.
  • Heat a grill or grill pan. Grill the steak to desired doneness. Rest the steak and keep warm for serving.
  • In a food processor, combine the cilantro, parsley, olive oil, cumin, lemon juice, a splash of the rice vinegar and some kosher salt. Pulse until just smooth, but still a little bit chunky.
  • Preheat a deep fryer to 350 degrees F.
  • In a bowl, combine the salt, sugar and chili powder. Fry the yucca until crisped, then drain and toss in the spice mixture.
  • Slice the steak, top with the chimichurri and serve with the fried yucca.

One 1 1/2-pound flank steak
3 tablespoons Worcestershire sauce
Freshly ground black pepper
Coarse salt
2 cups chopped fresh cilantro
1 cup chopped fresh parsley
2 tablespoons olive oil
1/2 teaspoon ground cumin
Juice of 1/2 lemon
Rice vinegar
Kosher salt
Vegetable oil, for frying
2 yucca roots, peeled, cut into 2-inch pieces and parboiled
1 tablespoon fine salt
1/2 tablespoon sugar
1 teaspoon chili powder

  • Marinade the steak. Combine the ingredients for the marinade in a small bowl. Pour the marinade over the sirloin steak in a large gallon zip-top bag, reserving 2 Tablespoons of the marinade for later use. Allow the steaks to marinate on the counter for 30 minutes while they come to room temperature.
  • Preheat the grill. While the steaks are marinating, fire up the grill. Preheat the grill and assemble your rotisserie attachment. If you aren't using a rotisserie, prepare your grill for 2-zone cooking with a high heat side and a low heat side.
  • Prep the steak. Remove the steak from the marinade and shake off any excess. Thread the steaks onto the rotisserie spit. If you are using kebabs, dice the steak into cubes and thread onto the skewers.
  • Grill the Brazilian steak. Place the steak on the rotisserie or high heat side of your grill. Cook, turning frequently, until the internal temperature reaches 120 degrees F (about 8-10 minutes on the grill, 30-45 on the rotisserie). Use a basting brush to coat the steak with the reserved marinade. Move the kebabs to the low heat side of your grill or continue to cook on the rotisserie for an additional 5 minutes or until your steaks reach your desired temperature. 125 degrees F for rare, 135-140 for medium, and 150 for medium well.

  • Preheat your charcoal grill. You can also use a rotisserie, if you have access to one. Set your charcoal up in 2 zones and vents all the way open. You want the temp to be really hot, around 500+ degrees F.
  • Prep the meat. Skewer the picanha with two metal skewers to secure each steak. Picanha has a fat cap on one side, so curve the steaks to make a C with the fat cap on the outside of the C. Season the steaks on all sides with the salt.
  • Grill the steaks. Place the skewers directly on the charcoal grill right in the middle between the hot and cool zones. Stand by to flip every 2 minutes to recreate a rotisserie experience without actually having a rotisserie. Cook to your preferred doneness. I cooked my steaks for about 15-20 minutes to 130 degrees F medium rare.
  • Rest, slice, and serve. Pull the picanha off the grill and let them rest. Use a heating pad to hold the skewers, then secure the skewer underneath and run knife on the outside of the steak to slice into thin slices.
