BREAD "GNOCCHI"

This is a recipe that I saw prepared on the Food Network and have made it many times since. It is quick, easy and uses ingredients already on hand. Great for a mid-week or late night dinner.

Bread

Steps:

  • Preheat broiler.
  • Heat a large pan over medium heat.
  • Chop bread into bite size pieces.
  • Add olive oil, butter and garlic to the skillet.
  • Melt butter into oil then add the bread.
  • Season the bread with salt and pepper. Toss and cook the bread 7 to 8 minutes then add the tomato sauce and fresh tomatoes.
  • Turn to coat and warm the tomato sauce, 3 to 4 minutes.
  • Remove the bread gnocchi and tomatoes from heat and transfer to a casserole dish, top with basil then cover the dish with cheese.
  • Place the casserole under the broiler and cook 2 to 3 minutes, until the cheese browns and bubbles. Serve immediately.
  • Sometimes I'll add some extra ingredients at the beginning depending on mood and what I have on hand. I made this with bacon and mushrooms last night.

8 slices bread, thick slices (French or Italian, stale bread works well)
3 tablespoons extra virgin olive oil
2 tablespoons butter
4 garlic cloves, finely chopped
salt & freshly ground black pepper
2 cups tomato sauce
3 small tomatoes, seeded and chopped
3 fresh basil leaves, torn
2 cups shredded mozzarella cheese (or any cheese you have on hand, provolone is a great choice)

CREAMY TUSCAN GNOCCHI SKILLET

This creamy gnocchi recipe is a dreamy way to weeknight dinner. Since it's a hearty, richly flavored meal that's made in a single dish and even includes a green vegetable, it's made to please the whole family-including the cook. The fact that it's vegetarian is something you can share or keep to yourself. Either way, this dish is a versatile addition to any busy cook's repertoire.

Creamy Tuscan Gnocchi Skillet image

Steps:

  • In 12-inch skillet, melt 1 tablespoon of the butter over medium heat. Add bread crumbs and garlic; cook and stir 1 to 3 minutes or until toasted. Pour into small bowl; clean out skillet.
  • In same skillet, melt remaining 5 tablespoons butter over medium-high heat. Add gnocchi, Italian seasoning and pepper flakes; cook 13 to 15 minutes, stirring frequently, until golden brown.
  • Add broth to skillet; heat to simmering. Cook 4 to 6 minutes, stirring frequently, until slightly thickened; reduce heat to medium. Stir in cream cheese until melted. Stir in spinach, a handful at a time, until wilted. Remove from heat; stir in tomatoes. Top with bread crumbs and Parmesan.

  • Heat a large nonstick skillet over medium heat. Chop bread into bite size pieces. Add extra-virgin olive oil, butter and garlic to the skillet. Melt butter into oil then add the bread. Season the bread with salt and pepper. Toss and cook the bread 7 to 8 minutes then add the tomato sauce and fresh tomatoes. Turn to coat and warm the tomato sauce, 3 to 4 minutes.

Steps:

  • Bring a large pot of salted water to a boil. Peel potatoes and add to pot. Cook until tender but still firm, about 15 minutes. Drain, cool and mash with a fork or potato masher.
  • Combine 1 cup mashed potato, flour and egg in a large bowl. Knead until dough forms a ball. Shape small portions of the dough into long "snakes". On a floured surface, cut snakes into half-inch pieces.
  • Bring a large pot of lightly salted water to a boil. Drop in gnocchi and cook for 3 to 5 minutes or until gnocchi have risen to the top; drain and serve.

  • Place a rack in middle of oven; preheat to 425°. Toss onion, garlic, tomatoes, gnocchi, 3 Tbsp. oil, and 1¼ tsp. Diamond Crystal or ¾ tsp. Morton kosher salt on a rimmed baking sheet to coat; season generously with pepper and toss again to combine.
  • Roast, stirring once or twice, until gnocchi are golden and starting to crisp, most of the tomatoes have burst, and onion is golden, 25–30 minutes.
  • Remove garlic from baking sheet, peel, and place in a small bowl. Mash with ¼ tsp. salt (garlic should be quite soft). Whisk in lemon juice and remaining 1 Tbsp. oil; season dressing with pepper and more salt if needed.
  • Add arugula, basil, and Parmesan to baking sheet and drizzle dressing over; toss to combine. Divide among plates and drizzle with a little more oil.
