BLUEBERRY MUFFIN BREAD (BREAD MACHINE)

This recipe is from the BH&G's Complete Guide to Bread Machine Baking Cookbook. The recipe is for a 2 pound loaf. I have friends who request that I make this for them.

Blueberry Muffin Bread (Bread Machine) image

Steps:

  • Add all the ingredients to the bread pan following the manufactures's directions for your bread machine.
  • Set the machine for the basic bread cycle.
  • Select the Medium crust setting.
  • *Do not use the delay cycle for this bread recipe.
  • **Optional Powdered Sugar Glaze.
  • Stir together in a small mixing bowl 1/2 cup sifted powdered sugar and 1-2 teaspoons milk to make a glaze to drizzle over the loaf of bread.

1 egg
1/4 cup water
3 tablespoons margarine or 3 tablespoons butter, cut up
4 cups bread flour
1/4 cup sugar
1 teaspoon salt
1/2 teaspoon ground nutmeg
1 1/4 teaspoons active dry yeast or 1 1/4 teaspoons bread machine yeast
1/2 cup dried blueberries

GRANDMA'S ENGLISH MUFFIN BREAD

Like english muffins, slices of this bread must be toasted to taste right. Grandma used to bake this in large greased cans coated with cornmeal, which added to the english muffin appearance. Today she uses non-stick pans.

Grandma's English Muffin Bread image

Steps:

  • Place ingredients in the bread machine pan in the order suggested by the manufacturer. Select the dough cycle.
  • Divide dough into two unequal parts, and shape into loaves. Place in one 9 x 5 inch loaf pan and one 7 x 3 inch loaf pan; non-stick pans are preferable, but greased and floured normal pans will suffice. Cover, and allow to raise until doubled in size.
  • Bake at 400 degrees F (205 degrees C) for about 15 minutes. Grandma bakes hers longer for a more browned and chewier crust.

  • Cut butter into pieces and let soften at room temperature.
  • Beat eggs lightly.
  • Mix flour, baking powder and salt together.
  • Add softened butter to bread machine bowl.
  • Add eggs to bread machine bowl.
  • Add flour mixture to bread machine bowl.
  • Add sugar to bread machine bowl.
  • Add vanilla to bread machine bowl.
  • Use the quick bread mode on your bread machine to make the bread.
