IMPOSSIBLY EASY SAUSAGE BREAKFAST PIE

Delicious sausage-and-eggs breakfast is impossibly easy when it's baked all in one pan.

Impossibly Easy Sausage Breakfast Pie image

Steps:

  • Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray.
  • In 10-inch skillet, cook sausage, bell pepper and onion over medium heat 8 to 10 minutes, stirring occasionally, until sausage is no longer pink; drain. Mix sausage mixture, potatoes and 1/2 cup of the cheese. Spread in pie plate.
  • In medium bowl, stir Bisquick mix, milk, pepper and eggs until blended. Pour into pie plate.
  • Bake 30 to 35 minutes or until knife inserted in center comes out clean. Sprinkle with remaining 1/2 cup cheese; bake 1 to 2 minutes longer or just until cheese is melted. Let stand 5 minutes before serving.

Steps:

  • Preheat oven to 400 degrees F. Place 1 pie crust into an ungreased 9-inch pie plate.
  • Mix prepared sausage, 5 eggs, mixed vegetables and cheese together in bowl; season with salt and pepper. Pour into crust. Top with remaining pie crust and crimp edges to seal. Cut 3 slits in top crust. Brush with remaining 1 beaten egg.
  • Bake for 35 to 37 minutes or until internal temperature reaches 165 degrees F. If needed, cover pot pie with foil to prevent top crust from over browning.
  • Let stand for 10 minutes before cutting and serving.

Smoked Sausage Pot Pie image

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Spray a 2 1/2-quart casserole dish with cooking spray.
  • Roll out puff pastry to the dimensions of the casserole dish, adding 1 inch on all sides. Cover and place in the refrigerator.
  • Melt butter in a large skillet over medium heat. Add onion; cook, stirring occasionally, until onion is soft and translucent, 5 to 7 minutes. Stir in garlic, herbes de Provence, salt, and pepper; cook for 1 more minute, stirring occasionally. Add flour and whisk to combine. Cook for 1 minute.
  • Pour in broth and cream gradually, stirring continuously until sauce bubbles. Add sausage pieces, vegetables, and potatoes. Cook, stirring continuously, until mixture bubbles again, 4 to 5 minutes. Pour into the prepared casserole dish.
  • Place puff pastry on top of the filling, letting excess dough hang over all sides. Brush pastry with the beaten egg.
  • Bake in the preheated oven until pastry is browned and the pot pie is bubbly, about 45 minutes. Cover loosely with foil after 25 minutes, to prevent overbrowning.
  • Remove from oven and cool on a rack for about 15 minutes. Serve warm.

  • In medium bowl, beat 4 of the eggs with fork; add salt and pepper to taste. In 9-inch omelet pan or skillet, heat 1 teaspoon of the olive oil over low heat. Add eggs; swirl pan to coat bottom with eggs. Once eggs begin to firm up, use rubber spatula to lift uncooked to bottom of pan. Slide omelet into pie plate. Top omelet with 1 cup of the cheese.
  • In 10-inch skillet, cook sausage until thoroughly cooked and no longer pink, using wooden spoon to break up and crumble. Add frozen vegetables; cook 3 minutes longer or until thoroughly heated. Drain and discard any excess liquid. Spoon sausage mixture onto omelet in pie plate. Top with remaining 1 cup cheese.
  • Make second omelet using remaining 4 eggs and adding salt and pepper to taste. Slide into pie plate.

  • Bake puff pasties according to package directions. Remove from oven and allow to completely cool. Remove the top center of each pastry and set pastry shells and tops aside, you will use them both.
  • Prepare Smithfield sausage patties according to package directions. I chose the stovetop method, cooking over medium heat for about 9 minutes. I continuously flipped the sausages so each side cooked evenly.
  • Once sausage patties are cooked, put them into the center of each puff pastry, like pictured. Place the pastry centers on top of each sausage; the sausage patty should be completely covered. Place each pot pie on a serving plate.
  • In a medium saucepan over medium heat, melt the butter. Add the flour and stir until smooth. Slowly mix in the milk. Season with rosemary, salt, and pepper. Bring this mixture to boil. Reduce heat to low and cook for 3 or 4 minutes - stirring often - until thickened.
