CLASSIC CREAMY CHEESECAKE RECIPE BY TASTY

Steps:
- Preheat the oven to 350˚F (180˚C). Grease a 10-inch (25 cm) springform pan with nonstick spray. Line the inside edges of the pan with parchment paper.
- In the bowl of a food processor, combine the graham crackers, 1 tablespoon of sugar, and the melted butter. Pulse to combine until the texture is similar to wet sand.
- Press the graham cracker crumbs into the prepared pan, using a measuring cup to compact in even layer.
- Bake for 8-10 minutes, until golden brown. Transfer to a wire rack and let cool to room temperature.
- Once cool, line the sides of the springform pan with parchment paper.
- In a large bowl, combine the cream cheese, remaining 2 cups (400 G) of sugar, and the salt. Using an electric hand mixer, blend until well-combined and fluffy.
- Add the heavy cream and beat to incorporate.
- Add the sour cream, flour, salt, and vanilla bean seeds, and beat to combine.
- Add the eggs, 1 at a time, and mix until fully combined, making sure not to over-beat. The mixture should be smooth and creamy.
- Pour the cream cheese mixture into the cooled crust.
- Wrap the outside of the springform pan tightly with foil and place the pan in a large baking dish. Fill the dish with 1 inch (2 cm) of boiling water.
- Gently transfer the baking dish to the oven and bake for 1 hour.
- Without opening the oven door, turn off the heat and let the cheesecake rest for 1 hour.
- Remove the springform pan from the baking dish and unwrap the foil. Run a paring knife gently around the outside of the cheesecake to loosen it from the sides of the pan.
- Cover the pan with plastic wrap and transfer to the refrigerator overnight.
- Remove the cheesecake from the refrigerator and release the springform pan. Remove the parchment paper lining.
- Top with fresh berries, if desired.
- Dip a knife into hot water for clean slices, then slice and serve.

- Preheat oven to 350ºF (180ºC).
- In a bowl, add the crushed graham crackers and melted butter and stir to combine.
- Place the graham cracker mixture in a greased 8-inch (20-cm) springform pan, spreading them in an even layer. Bake for 20 minutes or until in turns slightly golden on the top.
- In a bowl, mix the cream cheese and sugar using a hand mixer until smooth.
- Add the eggs and vanilla, and continue beating until all ingredients are fully incorporated.
- Add the cream cheese mixture to the top of the graham cracker crust.
- Bake for 1 hour, or until it looks semi-jiggly in the center and set on the edges.

Steps:
- Preheat oven to 350 F.
- Lightly butter a 9 1/2 inch springform pan.
- Cut a piece of wax paper or parchment to fit base of pan.
- Butter it and line bottom of pan with this.
- Put a piece of foil over outside of pan from the bottom in case the bottom seal is not tight.
- Cheesecake: In a food processor, combine cheeses with 3/4 cup sugar.
- Process until mixture liquifies, scraping down sides of the bowl.
- Add eggs and remaining sugar and continue to process until very smooth.
- Pour into prepared pan.
- Set pan in a larger ovenproof pan and add enough hot water to reach halfway up the sides of the springform pan.
- Bake 45 minutes, turn oven off, leave in an additional 15 minutes, then remove from oven and take out of water bath.
- Cool.
- Cover with saran wrap and refrigerate overnight.
- To serve, remove pan sides and invert onto serving platter.
- Smooth top, if necessary.
- Serve with raspberry sauce on the side.
- Raspberry sauce: Thaw raspberries.
- Puree in blender.
- Press through fine strainer to remove seeds.
- Mix in Grand Marnier.

- Preheat the oven to 400°F (200°C). Line an 8-inch round baking pan with parchment paper.
- Using a sharp knife, remove the top layer of wax from the Brie wheels. Scoop out the cheese and transfer to a large bowl. Discard the wax.
- To the bowl with the Brie, add the sugar and pancake mix and beat with an electric hand mixer on low speed for 60 seconds, or until smooth.
- Add the egg, heavy cream, vanilla, and baking powder and mix on low speed until incorporated, about 30 seconds.

- Add the chocolate chips to a large heatproof bowl. Microwave on 50% power for 1-2 minutes, stirring every 30 seconds, until melted.

- Arrange a rack in the lower third of the oven. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Arrange the Brie wheels on a cutting board. Spread the pomegranate preserves over 1 wheel of Brie. Sprinkle the shredded mozzarella over the jam.
- Place another wheel of Brie on top of the mozzarella. Spread the honey over the Brie. Top with the pecans, then the shredded pepper Jack.
- Place the last wheel of Brie on top of the pepper Jack. Spread the Dijon mustard on top of the Brie. Top with the shredded Monterey Jack.
- Drape the prosciutto over the Brie so that all sides are covered and the prosciutto overlaps on the top.
- In a small bowl, beat the egg and water together.
- On a lightly floured surface, roll out the puff pastry to a 12 x 14-inch (30 x 35 cm) rectangle.
- Place the Brie tower in the center of the puff pastry. Fold the corners of the puff pastry up to the center, brushing each layer with egg wash to secure. Brush the entire tower with egg wash. Cut a few slits in the top of the tower to allow steam to escape.
- Transfer the Brie tower to the prepared baking sheet and bake for 30-35 minutes, until golden brown. Let cool for 5 minutes before serving.
