STUFFED VEGETARIAN SHELLS

When my aunt first told me about these shells, they sounded like a lot of work-but the recipe whips up in no time. Sometimes I add a little cooked bacon to the ricotta filling. -Amelia Hopkin, Salt Lake City, Utah

Steps:

  • Cook pasta according to package directions. In a large bowl, combine the ricotta, broccoli, mozzarella, egg whites and seasonings. Drain pasta and rinse in cold water., Spread half the spaghetti sauce into a 13x9-in. baking dish coated with cooking spray. Stuff pasta shells with ricotta mixture; arrange over spaghetti sauce. Pour remaining sauce over pasta shells. , Cover and bake at 375° for 25 minutes. Uncover; sprinkle with Parmesan cheese. Bake until heated through, about 5 minutes longer.,

1 carton (15 ounces) part-skim ricotta cheese
3 cups frozen chopped broccoli, thawed and drained

1 tablespoon minced fresh basil or 1 teaspoon dried basil
1/2 teaspoon garlic salt
1/4 teaspoon pepper
1 jar (26 ounces) meatless spaghetti sauce
2 tablespoons shredded Parmesan cheese

Steps:

  • Heat oven to 375°F. Cook and drain pasta as directed on box; set aside.
  • Meanwhile, cook broccoli as directed on bag. In medium bowl, stir broccoli, ricotta cheese, Parmesan cheese and garlic powder until well mixed. Stuff shells with about 2 tablespoons broccoli mixture each.
  • Spread 1 cup pasta sauce on bottom of ungreased 13x9-inch baking dish. Place shells on top of sauce in baking dish. Spoon remaining 1 cup sauce over shells; sprinkle with Cheddar cheese.
  • Bake 20 to 25 minutes or until bubbly and hot. Cool 5 minutes.

Cheesy Chicken & Broccoli Stuffed Shells image

Steps:

  • Preheat oven to 350°.
  • Cook shells as directed--don't overcook because they will cook in oven again.
  • Cool shells in a large bowl of COLD water; set aside for now.
  • Sauté onion in 2 tablespoons of butter until tender, about 5 minutes.
  • Combine broccoli, onion, mozzarella cheese, sour cream, egg and chicken; set aside.
  • Melt 1/4 cup butter in saucepan. Stir in flour, instant bouillon and pepper.
  • Stir in milk and cream; bring to a boil, stirring constantly.
  • Boil and stir 1 minute until thickened. Remove shells from water, strain and pat dry with paper towels.
  • Spread small amount of sauce on bottom of 2-quart rectangular baking dish.
  • Stuff each shell with broccoli and chicken mixture; put shells in dish.
  • Spoon remaining sauce over shells and sprinkle with Parmesan.
  • Bake 30-35 minutes or until hot and bubbly.

  • Bring a large pot of water to a boil. Add the pasta shells and cook until slightly softened but still firm, about 7 minutes. Rinse with cool water and drain well. Separate any nesting shells and transfer them to a large sheet of foil or a baking sheet.
  • Add the eggs to a large bowl and whisk lightly. Add the ricotta, 1 1/2 cups mozzarella, 1/2 cup Romano or Parmesan, garlic, salt and basil and stir well to combine. Fold in the broccoli. Stuff each shell with about 1 1/2 tablespoons of the filling and set back down on foil.
  • Coat two 13- x 9-inch baking dishes with non-stick cooking spray. Pour about 1 cup of marinara into each baking dish and spread it out evenly over the bottom of the dishes. Divide the stuffed shells between the dishes and spoon the remaining marinara sauce over the top.
  • Cover the dishes with aluminum foil and bake for 25 minutes. Uncover and top with the remaining mozzarella and Romano or Parmesan. Return the dishes to the oven and continue to bake for 10 to 15 minutes or until the cheese has melted and the sauce is bubbly.
