GRILLED BANANAS
Steps:
- Build a charcoal fire or preheat a gas grill.
- Slice the bananas, in their skins, in half crosswise and then lengthwise so each banana yields 4 pieces. Set aside on a clean platter. In a small bowl, combine the sugar and cinnamon. Drizzle the honey on the cut sides of the bananas and sprinkle them with the cinnamon sugar. Let the bananas sit for 5 minutes.
- Place the bananas, cut side down, on the center of grill. Grill for 2 minutes or until grill marks appear. Using a pair of tongs, turn them over and cook for 5 more minutes, or until the skin pulls away from the bananas. Remove the bananas from the grill and serve them immediately, on top of vanilla ice cream and drizzled with bourbon or liqueur, if desired.
BROILED BANANAS ON VANILLA ICE CREAM
Steps:
- Preheat broiler. Arrange banana halves in shallow pan, cut side up. Sprinkle rum evenly over bananas and shake cinnamon on top. Broil 4-inch from flame until softened and beginning to brown. Place two banana halves in each of four bowls. Place a scoop of vanilla ice cream top and serve, topped with chocolate curls.
BROILED BANANAS WITH LEMON AND SUGAR
Steps:
- Preheat broiler. Peel the bananas and arrange them in one layer in a gratin dish. Pour the lemon juice over them, then roll them in the juice to prevent them from discoloring. Sprinkle them with brown sugar.
- Place the bananas under the broiler, about 4 inches from the heat, and broil them until they are brown on top, about 4 minutes. Turn the bananas over and place them again under the broiler for 3 to 4 minutes, until brown on top. They should be soft at this point when pierced with a fork.
- Cool the bananas until they are lukewarm, sprinkle them with the rum, if desired, and serve immediately.
