Steps:

  • Preheat the oven to 475 degrees F.
  • Brush the tenderloins with the olive oil and then roll in the crushed peppercorns. Place the meat on a roasting pan and roast for 20 to 25 minutes. Let rest for at least 5 minutes before thinly slicing.
  • Serve with dinner rolls, grainy mustard and horseradish sauce.

2 whole beef tenderloins, trimmed (trimmed weight 2 1/2 to 3 1/2 pounds)
1/4 cup olive oil
1 cup crushed tri-colored peppercorns
Dinner rolls, for serving
Grainy brown mustard, for serving

Cracker Barrel Chicken Tenderloin Recipe - (4.1/5) image

Steps:

  • Cut each chicken breast into strips or use tenderloins pieces. If using tenderloins cut and remove the white tendon off each end. In a bowl that has a cover or large Ziploc bag add the dressing, lime juice and honey; mix to combine. Add the chicken and mix to coat all the pieces. Marinate in the refrigerator for 1 hour. Remove chicken from the refrigerator and add to a larger skillet (marinade and chicken). Braise the tenders in a non-stick pan until golden brown in color, but not dry. Start the stove temperature at medium high to get things going. After it comes to a boil reduce the heat to low-medium and continue cooking. You just want them to simmer until all the liquid has cooked down. You still want a bit of glaze left in the pan. When chicken is done remove and serve. Cooking time: 40-45 minutes

1 (8 ounce) bottle Italian dressing, about 1 cup
2 teaspoons fresh or bottled lime juice
4 teaspoons honey

Steps:

  • Whisk water, soy sauce, olive oil, lemon juice, brown sugar, and garlic together in a large glass or ceramic bowl. Add chicken tenders and toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 3 hours.
  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Remove chicken from the marinade and shake off excess. Discard the remaining marinade.
  • Place chicken on the grill and reduce heat to low. Cook for 1 minute, then turn and grill until no longer pink in the center and the juices run clear, 4 to 6 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

  • In a large resealable plastic bag, combine the first eight ingredients; add chicken. Seal bag and turn to coat; refrigerate for at least 1 hour. , Drain and discard marinade.   • Combine the first 4 ingredients; rub over meat. Refrigerate for 2 hours. Remove papery outer skin from garlic (do not peel or separate cloves). Cut top off of garlic.
