BROWN SUGAR BISCUITS
These yummy rolls aren't really biscuits, but they're named after rolls I used to get at my local bakery. My family thinks they're sweet enough without icing, but a simple powdered sugar one would be nice.

- Preheat oven to 375 degrees F (190 degrees C). Lightly grease a baking sheet, or use parchment paper.
- In a large bowl, combine flour, brown sugar, baking powder, salt and cream of tartar. Cut in shortening until mixture resembles coarse crumbs. Mix in milk and vanilla. Knead briefly on a floured surface. Roll out into a large rectangle, 1/2 inch thick. Spread softened butter onto surface of dough. Mix together brown sugar and cinnamon; sprinkle evenly over butter. Roll tightly, and cut into 12 equal slices. Place on prepared baking sheet.
- Bake in preheated oven for 15 to 20 minutes, or until golden brown.

- Preheat oven to 450 degrees.
- In a large mixing bowl, combine flour, baking powder, baking soda and salt. Using your fingertips, rub butter and shortening into dry ingredients until mixture looks like crumbs. (The faster the better, you don't want the fats to melt.) Make a well in the center and pour in the chilled buttermilk. Stir just until the dough comes together. The dough will be very sticky.
- Turn dough onto floured surface, dust top with flour and gently fold dough over on itself 5 or 6 times. Press into a 1-inch thick round. Cut out biscuits with a 2-inch cutter, being sure to push straight down through the dough. Place biscuits on baking sheet so that they just touch. Reform scrap dough, working it as little as possible and continue cutting. (Biscuits from the second pass will not be quite as light as those from the first, but hey, that's life.)
- Bake until biscuits are tall and light gold on top, 15 to 20 minutes.

SUGAR BISCUITS

- Preheat the oven to 450 degrees F.
- Combine the flour, baking powder, baking soda and salt in a large bowl. Using a dough cutter, combine until the ingredients are incorporated. Scatter the cold butter pieces over the top of the flour mixture and continue to combine until the mixture resembles coarse meal. Add the buttermilk and mix just until the dough begins to come together.
- Scrape the dough onto a lightly floured counter. Pat the dough into a 10 by 12-inch rectangle about 3/4-inch thick. Use a 3-inch round cutter to cut out the biscuits. Press together the scraps of dough and repeat the process. Place the biscuits on a baking sheet lined with parchment paper; brush the tops with cream and sprinkle with sugar. Bake the biscuits until lightly golden brown, 12 to 15 minutes. Remove from the oven and brush the tops with the remaining melted butter.

- Combine Bisquick and milk and set aside.
- In a cupcake pan, place 1 T. melted butter in eight cups.
- Then place 1 T. brown sugar into each cup with butter.
- Next sprinkle desired amount of cinnamon into each cup.
- Stir each cup to mix thoroughly.
- With a tablespoon, place enough biscuit mix into each cup to cover brown sugar mixture.
- Place cupcake pan onto large cookie sheet to avoid dripping into oven.
- Bake at 450 degrees for 10-12 minutes.
- When done, place a cookie sheet over the cupcake pan and invert until biscuits drop onto cookie sheet.

- Sift the flour into a large bowl and add a pinch of salt. Rub the butter into the flour until it resembles fine breadcrumbs. Add the light brown sugar, egg yolk and vanilla and continue to rub the ingredients together until fully incorporated. Bring together into a ball then roll out the dough between 2 sheets of baking paper until 3-5mm thick. Chill for 30 minutes or until firm.
- Line 2 trays with baking paper. Cut out stars from the dough using cutters (about 11cm across). Re-roll any offcuts. Transfer to the lined trays. Mix the egg white with 1 tablespoon of cold water; brush onto the stars. Sprinkle with demerara sugar, and chill for 30 minutes. Meanwhile, preheat the oven to 200°C, fan 180°C, gas 6.
- Bake the stars for 12-14 minutes until golden and a sandy consistency. Leave to firm up for 10 minutes before transferring to a wire rack to cool completely.
- To decorate, sift the icing sugar into a bowl and gradually stir in 2 tablespoons of water until you have a fairly thick but pipeable consistency. Divide the icing between two bowls and tint one to your chosen shade.
