BAKED BRUNCH OMELET
This is so easy to prepare and everyone raves about it. The best part is that you can put it together the night before and just pop it in the oven the next morning. Delicious!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking pan.
- Place half of the bread cubes on bottom of baking pan. Sprinkle with half of the ham and then half of the cheese; repeat.
- In a large bowl, beat together eggs, milk, salt, hot sauce and green onions. Pour egg mixture into pan.
- Place pan on top of a baking sheet with a rim and place in oven. Pour water into baking sheet and bake for 60 minutes, or until eggs have set.

OMELET MUFFINS
I make these muffins on a Sunday night and freeze them. I take a couple of them to work and just pop them in the microwave for 45 seconds to 1 minute.

- Preheat the oven to 350 degrees F (175 degrees C). Lightly grease 2 muffin tins. Line a baking sheet with aluminum foil.
- Lay bacon strips in a single layer on the baking sheet. Bake in the preheated oven until browned and crisp, about 30 minutes. Reserve grease. Drain bacon slices on paper towels. Chop into small pieces.
- Transfer bacon grease to a skillet. Cook onion in the skillet over medium heat until transparent. Drain on paper towels.
- Whisk eggs and milk together in a bowl. Add bacon, onion, spinach, Colby Jack cheese, hot pepper sauce, Italian seasoning, salt, and pepper. Scoop mixture into muffin pans using an ice cream scoop, filling cups 3/4 full.
- Bake in the preheated oven until muffins harden at the edges, about 50 minutes.

BRUNCH OR LUNCH BABY OMELET MUFFINS
What a cute way to serve an omelet! They're great for a brunch or to grab for an on-the-go breakfast. We used sausage in the omelet this time, but can't wait to try other meats! And we loved adding the peppers. It gave the muffins a slightly sweet taste. You can customize these based on your taste buds. Just delicious!

Steps:
- Brown meat and onions in skillet until tender. Drain and set aside until cooled off.
- Whisk eggs until fluffy, adding half & half. Mix all other ingredients and set in the refrigerator overnight (covered).
- Use a cupcake baking pan, heavily buttered. Ladle into holes and bake. Add a tiny amount of shredded cheddar cheese on tops before baking.
- Oven @ 375 - Bake for 20 minutes or until light golden.

- In a large bowl, mix together the applesauce, butter, sugar, brown sugar, egg, apple cider vinegar and vanilla extract until well combined.
- In the same large bowl, add the flour, baking soda, baking powder, salt and cinnamon. Gently fold the ingredients together until just combined. Do not overmix.
- Spoon the batter into the muffin cups until 2/3 the way full. I use a cookie scoop which works great for mini muffins.
