These are the most famous candies in Ohio and are made so many different ways. This happens to be our favorite way. Bare minimum I make at least 12 dozen. My entire family always want their share of Buckeyes for Christmas. So, they must be made. lol They are very rich candies that are delish. I will dip them in different...

Steps:

  • 1. Cream together your first 3 ingredients. Then start adding your sugar a cup or two at a time. Now this will get really hard to mix and I usually grab my husband at this point to stir this together. But you want it to be sorta crumbly but still sticking together. So, you may use the whole pd. of sugar or not. Once you make them a few times you will get the right texture down. I have made these so many times I really don't measure to much. If you find it to dry add some more peanut butter.
  • 2. Now, begin rolling into small balls about 1 inch in size and place on a cookie sheet with wax paper. Once you have them rolled push toothpicks down in center of each Buckeye. About 1/2 way or so. You will place these in the freezer for about 10 to 15 minutes or so just to get them cold. (Don't let them get too cold or else you will cause the chocolate to crack after they are dipped)
  • 3. While they are chilling, melt down your candy chocolate. I have used 1 bag of milk and 1 bag of dark and mixed together. I have also added into milk chocolate a bag of Ghiradelli dark chocolate. WOW, is that good.
  • 4. Now, once you start dipping the balls into the chocolate you want to go fast. Dip them about 2/3 of the way so that they look like Buckeyes. Now, sit them on another wax piece of paper.
  • 5. Once dry remove the toothpicks and plate them. Use plastic gloves if possible so that you do not get finger prints on the chocolate.
  • 6. At Christmas time I dip them in white chocolate too adn spinkle colored sugars on top or I drizzle green or red on top.
  • 7. Melanie, made these for Valentine's day and for a bake sale for Smile Train. They are beautiful in the white chocolate and red sprinkles.

1 stick butter, softened
18 oz jar of jif creamy peanut butter
2 tsp vanilla or one vanilla bean
1 lb confectioners' sugar, approx.
2 lb candy chocolate, approx.
1 box toothpicks
wax paper

BUCKEYES-SOME LIKE 'EM COLD (AND WITHOUT WAX)

What a is a buckeye? Well, popular in Ohio it's a no-cook pb+choc ball that is really easy to make, especially if you get the kids to make the balls! The pb filling is similar to the inside of a reece cup. These buckeyes are best kept in the freezer. I've tried recipes that call for chocolate chips, baking chocolate, wax and different fillings, but the filling in these seems easiest to work with and ends up being nice and shiney too, plus the choc. bark coats much nicer than any combo of choc and (yuck) parafin wax and you can't beat the texture right out of the freezer! If you have one, store them in a big plastic gallon ice cream tub. Recipe came from my friend, Nicki Shumway. I'd rather eat hers than make them, but hey...when you need the recipe, you need it!

Buckeyes-Some Like 'em Cold (And Without Wax) image

Steps:

  • Cook time is freeze time.
  • Mix first 4 ingredients together in big bowl. (use your stand mixer if you have one to make the work easier).
  • Wash hands and roll mixed dough into quarter or smaller size balls (we prefer them smaller than bigger -- they are more pop-able that way!). This recipe will make 5-6 dozen nickel size ones.
  • Method #1 --.
  • Place the balls on a big cookie sheet covered with wax paper. Stick a toothpick into each one. Set in freezer to firm up. After they are thoroughly chilled and working with 10 or so out of the freezer at a time, take a toothpick and dip into the chilled balls halfway into melted chocolate OR --.
  • Method #2 --.
  • Don't put toothpicks in, chill the balls in the freezer and let them harden up. With a small spoon, dip some melted chocolate bark over each ball trying to cover the end and maybe half way down. Let them harden up and then --.
  • Either method you choose, store in an air tight container IN THE FREEZER. Trust me -- they are best this way.
