Steps:
- Mix flour and salt with fork.
- Beat oil and water with whisk or fork to thicken.
- Pour into flour and mix with fork.
- Press into 9" pie crust.
- Fill with quiche mixture and bake at 400F until done.
- NOTES: I've never made this with canola oil.
- You can double the recipe, divide dough in half, and roll out into a pair of rounds for two-crust pies.
- This recipe is not suitable for baked pie crust shells.
- It makes a nice, flaky crust that's suitable for everyday use.
EASY QUICHE - SELF MADE CRUST
This is the most bizarre recipe but it works! basically the heavy ingredients sink and forms a kind of pasty crust. it's not a perfect crust but my god it tastes good. no rolling out the crust before hand and then putting the ingredients on top. this is a one bowl recipe (if you don't want to pre-cook any of the veggie) and i whipped this up in ten minutes. This makes excellent party food! the vegetables that you can use is endless. carrots, sweetcorn, peas, salmon, brocolli....

Steps:
- Preheat oven to 165°C/325°F/Gas Mark 3.
- Fry for 5 minutes any of the vegetables that you use if you don't want crunchy bits in your quiche. I don't bother with this as i like to have a bit of a crunch in my quiche.
- Mix the milk, flour and eggs together in a large bowl, whisk/beat until smooth.
- Add all the other ingredients into the mix.
- Grease a flan dish with oil or butter (or a spray oil if you use those) - and pour the mixture into a flan dish, or any other dish that will hold the mix (or even split it into more dishes, just use what you have).
- Bake in a pre-heated oven at 165°C (325°F/Gas Mark 3/moderate oven) for 45 minutes, or until browned on top. If you're using a fan oven, then cook this at 140°C.
- Remove from the oven and leave to cool for 5 minutes.

BUILD YOUR OWN QUICHE
Here is a VERY easy recipe to start out with. You can use any combination of cheeses & veggies (or meats). I've experimented with many. Just make sure to sweat out your veggies a little so they don't water down your eggs. I make mine with NO crust to save on calories & everything stays the same. The best combination I've made is Bavarian ham & salami for the meat, 3/4 cup of fontina cheese in the quiche and 1/4 cup of parmesan on top. Then, I sprinkle tastefully simple (garlic garlic, about a TBSP) on top. MMM!

- Prepare crust as instructed and let cool (or skip this step to save calories & fat!).
- whisk together eggs, sour cream & cottage cheese, salt, Worcestershire.
- Layer veggies/meats on the bottom of the crust and sprinkle 3/4 cup of cheese on top.

- Prepare Crust: Preheat oven to 350 degrees. Roll pie crust out and fit into 9 inch pie dish. Trim any excess crust and flute the edges.
- Blind Bake Crust: Line the inside of the pie crust with parchment paper and fill with pie weights or beans (I use pinto beans) make sure that they are up against the sides of the pie crust. Bake the crust for about 20 minutes. Remove the weights and then bake for another 10 minutes. Remove from the oven and allow to cool. The crust will be golden.
- Prepare the egg mixture: add the eggs to a large measuring cup. Add the heavy cream, then add the milk, the total measurement of the eggs, cream and milk should come to 2 and 1/2 cups (600 ml). Add the salt and pepper.
- Mix: use a hand mixer, or whisk vigorously, to ensure the egg and cream mixture is completely mixed.

- If you're adding onions, leeks, or other chopped veggies, give them a quick sauté first.
- Prep your deep-dish pie pan (or tart pan) with pie dough for a single crust. We're going to "blind bake" the quiche crust before pouring in the filling.
- To blind bake the crust, line your crust with aluminum foil, shaping it so it fits the crust, all the way to the edges. To weigh down the foil, fill the foil with dried beans or pie weights if you're fancy, distributing them across the bottom and partly up the sides.
- Bake the crust in a preheated 425 degrees F oven for 7 minutes. Carefully remove the foil and the weights. Then return the foil-free crust to the oven for another 5 minutes.
- Now for the filling! We're using three whole eggs plus two extra egg yolks. Whisk together the eggs with cream and milk until well mixed.
- Next, layer your fillings into the crust. First, lay down two-thirds of your sautéed veggies and two-thirds of your cheese. Carefully spoon in your creamy egg mixture.
