ORANGE BUTTERMILK SALAD
A refreshing chilled salad with orange gelatin, pineapple, buttermilk, and whipped topping.

Steps:
- Mix pineapple and sugar together in a medium saucepan, and bring to a low boil, stirring occasionally. Stir in gelatin until completely dissolved, remove from heat, and cool to room temperature. Add buttermilk, and refrigerate 1 hour, or until partially set.
- Gently fold in whipped topping. Pour mixture into a lightly oiled gelatin mold. Refrigerate 8 hours, or until completely set.

- In a saucepan, bring pineapple to a boil. Remove from the heat; add gelatin and stir to dissolve. Add buttermilk and mix well. Cool to room temperature. Fold in whipped topping. Pour into an 11x7-in. dish. Refrigerate several hours or overnight. Cut into squares.

- Drain about 3/4 of the liquid from the pineapple.
- Pour the pineapple and the rest of the liquid into a small pot and warm.
- Mix the jello and the pineapple w/ liquid.
- Next stir in the buttermilk.
- Refrigerate until thick. **This will take a while. I usually let it sit overnight.**
- Gently mix in the cool whip and pecans into the buttermilk mixture and place into your serving bowl. It's ready to serve!

- Whisk together the buttermilk, mayonnaise, chives, vinegar, sugar, lemon juice and 1/2 teaspoon each salt and pepper in a small bowl. Combine the walnuts, celery and apples in a separate large bowl. Pour three-quarters of the dressing over the celery-apple mixture and toss to coat. Let stand for 5 minutes at room temperature, then toss again. Adjust the seasoning as desired. Add the remaining dressing and toss again. Serve at room temperature.

- 1. In a small saucepan bring the pineapple to a boil and pour into a large heat proof mixing bowl.
- 2. Add the 2 packages of strawberry jello and mix until the jello is completely dissolved.
- 3. Add the 2 cups of buttermilk and mix well. Allow this mixture to cool on the counter for about 20 minutes.
- 4. After the jello mixture has cooled carefully add the Cool Whip until well mixed. I use a whisk for this step.
- 5. Pour the mixture into a 2 quart baking dish and chill until set.
- 6. Serve cold as a side-dish or dessert. This has a nice tangy taste and goes well food.

- All fruit must be washed well and desseded .
- Skins of apples & pears may be left on.
- Ensure that the orange has been well peeled & all the pith has been removed.
- Cut into small cubes.
- Toss all of the above together& pour enough milk to cover the fruit.
- Lime juice and sugar can be adjusted based on tastes.
- Refrigerate for 5 hours -- or overnight if possible.
- The milk gets a wonderful fruity flavour the next day.
