My mother was a country cook, plain and simple. But as I have traveled and worked and experienced foods from around the world, I look back and realize that many of the dishes she prepared, while simple, were perfect for that moment. Sometimes we have to put emotion and love in a dish to make it extra-special. The dish I am going to give you today is one like that. Simple and easy, yet full of love and goodness. - Combine cabbage, tomatoes with juice, onion, Italian seasoning, salt, and black pepper in a large pot over low heat. Bring cabbage mixture to a simmer and crumble ground beef into the pot. - Place the cabbage in a greased 2-1/2-qt. baking dish. In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the rice, salt if desired and pepper; spoon over cabbage. , Combine soup and water; pour over beef mixture. Cover and bake at 350° for 40-50 minutes or until rice and cabbage are tender. Uncover; sprinkle with cheese. Bake 5-10 minutes longer or until the cheese is melted.

CABBAGE AND GROUND BEEF CASSEROLE
This is a simple old recipe that makes up quickly and tastes good. If you like cabbage you will like this. Its filling and economical. Grandma used to make this when we had been working outdoors all day and there was not a lot of time for cooking. It stirs up quickly and then bakes in the oven for an hour without fuss.

- 1. Preheat oven to 350 degrees. Brown beef and onion. Drain off any grease. Place 3 cups cabbage in the bottom of a 2 quart casserole. Salt and pepper to taste. Cover with meat mixture. Salt and pepper to taste. Top with remaining cabbage. Pour soup over all. Salt and pepper to taste. Cover and bake for 1 hour. You may wish to remove cover for the final 10-15 minutes of baking.

- Preheat the oven to 400 degrees F (200 degrees C). Spray a casserole dish with cooking spray.
- Place diced tomatoes in a colander over a bowl. Let drain and retain the juice.
- Meanwhile, heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Transfer to a large bowl. Drain and discard most of the grease from the skillet.
- Cook onions in the remaining grease over medium-low heat until the onion is soft and beginning caramelize, about 15 minutes. Remove from the heat and add to the beef with drained tomatoes and condensed soup. Add some tomato juice if necessary to thin the mixture slightly.
- Place the cabbage in the prepared casserole dish, mounding it in the middle. Pour beef mixture over top and cover tightly with foil.
- Bake in the oven for 1 hour. Remove the foil and bake for 1 more hour. Remove from the oven and allow to cool for 20 minutes or so before serving. Serve hot.

GROUND BEEF AND CABBAGE CASSEROLE
This is a simple, delicious casserole to put together. I have made this using ground beef and tomato sauce, or with a seasoned ground pork sausage and along with a traditional style spaghetti sauce. No matter how it's made, both taste great! The seasoned pork sausage I used, already had salt, course cracked pepper, dried sage, onion and fresh garlic added to it. Have also made this using a lb. of leftover (already-cooked) taco seasoned meat, which gave this dish lots of flavor.

- In a skillet, brown the ground beef; drain off the excess grease.
- Add beef back to the skillet, then add the onion, garlic, salt & pepper, and the red pepper flakes.
- Add the tomato sauce, stir and heat the tomato/beef mixture, over low heat.
- At this point, set the oven temp to 350 degrees.
- Spray the inside of a 2-1/2 quart casserole baking dish, with a no-stick cooking spray.
- Add 2 cups of the shredded cabbage to the casserole baking dish.
- Add half of the tomato/beef mixture, over the shredded cabbage.
- Repeat layer of cabbage and tomato/beef mixture.
- Sprinkle casserole with the parmesan cheese.
- Cover, and bake in oven for 45 minutes.
