CABBAGE SALAD
"This crisp, fresh-tasting slaw keeps in the fridge for several days," notes Deborah Moore-Dedenbach from Big Bay, Michigan. It's a bargain, too, at 13 cents a serving. "We live about an hour from the nearest major city, so shopping trips can be few and far between. I often buy cabbage rather than lettuce for salads, because it stores longer," Deborah says.

Steps:
- Finely shred the head of cabbage; do not chop. Combine the green onions and cabbage in a large bowl, cover and refrigerate until ready to serve.
- Preheat oven to 350 degrees F (175 degrees C).
- Make the crunchies: Melt the butter in a pot. Mix the ramen noodles, sesame seeds and almonds into the pot with the melted butter. Spoon the mixture onto a baking sheet and bake the crunchies in the preheated 350 degrees F (175 degrees C) oven, turning often to make sure they do not burn. When they are browned remove them from the oven.
- Make the dressing: In a small saucepan, heat vinegar, oil, sugar, and soy sauce. Bring the mixture to a boil, let boil for 1 minute. Remove the pan from heat and let cool.
- Combine dressing, crunchies, and cabbage immediately before serving. Serve right away or the crunchies will get soggy.

THAI CABBAGE SALAD
A great recipe is like a strong friendship-it gets better with age. Epicurious member Sooz Wolhuter of Laguna Beach, California, crafted this cabbage salad years ago, riffing on a coleslaw recipe. The blend of ribboned cabbage, carrots, cucumbers, peppers, and green onions mixed with spicy soy and chile garlic is perfect for large gatherings. If peanuts aren't enough protein for you, add some seared Ahi tuna or grilled sliced chicken to bulk it up.
Yield Makes 20 servings
Number Of Ingredients 15
Steps:
- In a small bowl or glass jar with a tight-fitting lid, whisk together the vinegar, soy sauce, sugar or honey, chile garlic sauce, sesame oil, garlic, and chiles. Slowly whisk in the vegetable oil or, if using a jar, add the vegetable oil, seal the jar, and shake vigorously.
- In a large salad bowl, toss together the cabbage, carrots, cucumber, and red bell pepper. Shake or whisk the dressing thoroughly, then pour it over the salad and toss to coat the vegetables. Add the onions and cilantro and toss again. Sprinkle the salad with peanuts and serve.
- The DRESSING can be made ahead and refrigerated, in the glass jar or another airtight container, up to 1 week. Whisk or shake before using.

- Everyday Cabbage Salad. This recipe is just what it says it is: an everyday cabbage salad that goes well with just about anything. It’s a simple mixture of shredded red cabbage, green cabbage, and carrots.
- Asian Cabbage Salad. Asian cabbage salad shares a similar red cabbage, green cabbage, and carrot base as the everyday variety above, but it’s a bit heartier.
- Mediterranean Cabbage Salad. Believe it or not, Mediterranean cabbage salad is even more involved than the first two! It shares many of the same ingredients and contains radishes, fresh dill, green onions, etc.
- Sesame Lime Cabbage Salad. Taking only 15 minutes to make, sesame lime cabbage salad is always a hit at most parties and outdoor get-togethers. It somehow walks the balance between sweetness and tanginess perfectly, and the sesame seeds and fresh veggies give it plenty of crunch.
- KFC Coleslaw. And here’s the cabbage salad recipe many of you have been waiting for – copycat KFC coleslaw. It tastes so good that it’s hard for most people to believe how easy it is to make.
- Indian Cabbage Salad. This gorgeously colorful salad has a lot more heat than the others on the list, but that doesn’t make it any less scrumptious. There are a few ingredients in this one that might be a little harder to find, but everything you need should be at your local Indian market or online.
- Apple Cabbage Salad With Walnuts and Gorgonzola. Of all the options I’ve given you here, this one is the most like a garden-fresh salad. That’s because you’ll use an actual salad mix (and Napa cabbage) for the base.
- Simple White Cabbage Salad. There isn’t much to this simple white cabbage salad – just white cabbage, fine sea salt, vegetable oil, white wine vinegar, parsley, and black pepper.
- Spicy Mexican Coleslaw. Spicy Mexican coleslaw looks almost just like “regular” coleslaw. It includes shredded cabbage, carrots, and cilantro. The difference comes in the flavor.
- Thai Cabbage Salad. Finally, Thai cabbage salad is another fantastic choice for those of us who enjoy our salads with a bit of an Asiatic flair. The dressing combines garlic, sambal oelek, fish sauce, lime juice, peanut oil, and coconut aminos.
