CAESAR-STUFFED EGGS (RACHAEL RAY)

Simply a great alternative to the age old stuffed egg. This was a RR recipe, but I customized it to my own liking and made it a bit simpler.

Caesar-Stuffed Eggs (Rachael Ray) image

Steps:

  • Place eggs in a large stockpot and fill halfway with water. Set burner on high and cover pot. When water comes to a boil turn off the heat, cover and let sit for 10 minutes.
  • Run cold water in pot until eggs can be handled by hand. Remove shells and discard.
  • Slice eggs in half and remove yolks.
  • Place yolks and remaining ingredients into mixing bowl and mix thoroughly.
  • Scoop mixture into egg halves.
  • Enjoy!

12 eggs
1/2 tablespoon Worcestershire sauce
1 teaspoon minced garlic
3 tablespoons mayonnaise
2 teaspoons anchovy paste (I used mashed anchovies)
1/2 small white onion (diced, or 1/3 cup)
1/4 cup parmesan cheese (grated)
1 teaspoon lemon juice
salt (to taste)
black pepper (to taste)

My dad loves these stuffed eggs, which are a Southern favorite. I've been cooking since I became a teenager, and this is one of my original recipes.

Steps:

  • Slice eggs in half lengthwise; remove yolks and set whites aside. In a small bowl, mash yolks with a fork. Add the mayonnaise, pickle relish, mustard, garlic salt, Worcestershire sauce and pepper; mix well. , Stuff or pipe into the egg whites. Refrigerate until serving. Garnish with parsley if desired.

  • Cut eggs lengthwise in half. Slip out yolks into medium bowl, and mash with fork. Stir in mayonnaise, the remaining Parmesan cheese, garlic, Worcestershire sauce, lemon juice, pepper and salt. Fill whites with egg yolk mixture, heaping it lightly. Sprinkle bread crumb mixture over eggs. Cover and refrigerate until ready to serve. Spread romaine evenly on large platter; place eggs on top.
