Cajun Chex Mix Recipes
CAJUN CHEX MIX
If you like a little spice in your snacks this recipe is for you. I make this year around for camping and snacking but especially at Christmas for gift giving.

Steps:
- Melt butter in medium saucepan.
- Add everything but cereals, pretzels, cheerios and nuts to butter.
- Heat to just below boiling.
- Mix together cereals, pretzels and nuts in large roasting pan.
- Pour butter mixture over gradually mixing all together.
- Bake@ 300 degrees for 45 minutes stirring every 15 minutes.
- Cool and store in plastic bags.
- This freezes well.

Steps:
- Preheat oven to 250°. Place first five ingredients in a large bowl. Mix remaining ingredients; toss with cereal mixture. Spread into an ungreased 15x10x1-in. pan., Bake 40-60 minutes, stirring every 15 minutes. Store in airtight containers.

CHEX CAJUN KICK
I've been on a Chex Mix kick since I found the winners of a Chex contest. My work has been greatly enjoying the fruits of my labor (since cereal is bad for my hypo-glycemic husband). They were enjoying the sweet mixes, so I was a little hesitant about the spicy choice, but one and all loved this one, too!

Steps:
- 1. In large microwavable bowl, mix cereals, pretzels, and nuts.
- 2. In 2-cup microwavable measuring cup, microwave butter uncovered on High about 40 seconds or until melted. Stir in Creole seasoning and pepper sauce. Pour over cereal mixture; stir until evenly coated.
- 3. Microwave uncovered on High 6 minutes, stirring every 2 minutes. Spread on waxed paper or foil to cool. Store in airtight container.

Steps:
- preheat oven to 250F 2 rimmed sheet pans.
- Place cereals, crackers, pretzels, and peanuts in a large microwave proof bowl.
- Melt butter, add spices,worcestershire sauce, and hot sauce if using.
- Mix well and pour over cereal mix. Stir to mix.
- Microwave on high for 2 minute Stir well.
- Microwave 2 minute Stir well.
- Divide onto sheet pans, bake 20 minute.stir and rotate pans.
- Bake 20 min, cool and enjoy!
