I created this candy by combining my husband's favorite cookie recipe and my mom's caramel dip. These sweets really appeal to kids...plus, they can help make them!-Tamara Holschen, Anchor Point, Alaska

Caramel Marshmallow Treats image

Steps:

  • Line two baking sheets with waxed paper; set aside. In a large saucepan, cook and stir the milk, caramels and butter over low heat until melted and smooth. Remove from the heat; stir in the cinnamon and vanilla., Place Rice Krispies in a shallow bowl. With a toothpick, dip each marshmallow into warm caramel mixture; turn to coat. Press bottoms into Rice Krispies; place treats on prepared pans. Let stand until set.

1 cup butter, cubed

Caramel-Dipped Marshmallows image

Steps:

  • Fill a glass with ice water and set aside. Line a cookie sheet with waxed paper and sprinkle it generously with confectioners' sugar; set aside.
  • Combine the brown sugar, sorghum and butter in a saucepan over medium. Heat until the butter and sugar melt, 3 to 5 minutes. Add the condensed milk and bring to a simmer; cook for about 1 minute. Lower the heat and continue to cook, stirring constantly, until the mixture registers 240 degrees F on a candy thermometer or until a soft ball forms when a spoonful of the caramel is dropped into the glass of ice water, 15 to 20 minutes. Let stand for 5 minutes.
  • Skewer the marshmallows and dip them in the caramel so that the sides are covered but the tops are not. Place on the prepared cookie sheet to cool. Before the caramel sets, sprinkle the dipped sides with a little flaky sea salt.
  • Serve immediately or wrap each candy in waxed paper to enjoy at a later time--if it's really humid where you are, they won't hold up for long!

1 cup packed dark brown sugar
1/2 cup sorghum syrup
4 tablespoons unsalted butter
5 ounces sweetened condensed milk
15 extra-large large marshmallows
Flaky sea salt, such as Maldon, for sprinkling

Steps:

  • Line a baking sheet with waxed paper; set aside. Place nuts in a shallow dish. In a large microwave-safe bowl, combine caramels and water. Microwave, uncovered, on high for 30-90 seconds or until melted, stirring twice., Dip each marshmallow into melted caramel, then roll in pecans. Place on prepared baking sheet. Let marshmallows stand until set.

Caramel Marshmallow Krispy Balls image

Steps:

  • 1. Lay wax paper over counter tops or table. Place rice krispies into a large bowl, set next to wax paper. Open marshmallows and have handy near wax paper. In a large heavy saucepan over medium heat, melt together caramels, sweetened condensed milk, and butter. Cook and stir until caramels are melted and the mixture is smooth. Place pan near wax paper on a hot pad. Have 2 forks, one to stab the marshmallow and one to help remove it from fork. Dip marshmallow into caramel, roll in rice krispies, then set on wax paper. Continue until all caramel is gone. If caramel starts to harden, you can return to stovetop to melt again. Allow to set up or dry at room temperature. For a quicker set up, place in freezer for 30 minutes. Serve at room temperature. Store in air tight containers in refrigerator or freezer. Can be left out all day on a goodie tray with no problems.

10 c rice krispies or a little more
2 pkg large marshmallows, you probably won't use them all
2 - 14 oz pkg of caramels, unwrapped
1 can(s) sweetened condensed milk
1 c butter, softened

Steps:

  • Spray a 9x13-inch baking dish with cooking spray.
  • Place cereal in a large heatproof bowl.
  • Melt butter in a saucepan over medium-high heat. Stir brown sugar, cream, and corn syrup into butter; cook, stirring, until mixture becomes thick and syrupy, 7 minutes.   • Line a baking sheet with wax paper and spray with cooking spray. Have pretzels crushed and measured and marshmallows ready.
  • In a large microwavable safe bowl place caramels and milk. Cook on high for 1 minute and stir. Cook about 1 - 1 1/2 minutes more, stirring and checking every 15-30 seconds until it is just melted and smooth. Be care to not overheat because caramel will become very hard when cooled. Gently mix in crushed pretzels.
  • Using 2 spoons, scrape about a tablespoon full onto the cookie sheet (see photo in post). Place about 3-4 caramel / pretzel scoops then immediately push a marshmallow down firmly into the center. It's okay to really push it down, so the pretzels spread and the marshmallow sticks to the caramel. Caramel can be reheated for a few seconds if it starts to harden and become hard to work with.
  • Finish placing all the marshmallows in caramel. Then go back and shape with fingers caramel in a more circular shape around marshmallow.
