CARAMELIZED ONION AND HORSERADISH MASHED POTATOES
What a wonderful addition to plain mashed potatoes! These go really well with a grilled steak, ribs, or a grilled tuna steak.Originally from Cooking Light, it's comfort food fit for company!

Steps:
- Melt 1 tablespoon butter in a medium nonstick skillet over medium-high heat.
- Add onion and sugar; sauté 10 minutes or until caramelized.
- Remove from heat and stir in vinegar if desired.
- Place potatoes in a saucepan and cover with water.
- Bring to a boil; reduce heat and simmer for 15-20 minutes or until tender.
- Drain and return potatoes to pan.
- Add 3 tablespoons butter and milk; mash to desired consistency.
- Cook 2 minutes or until thoroughly heated through, stirring constantly.
- Combine Dijon mustard and remaining ingredients in a small bowl, stirring with a whisk until blended.
- Add Dijon mustard mixture and caramelized onion mixture to potato mixture, stirring to combine.
- Serve.

CARAMELIZED-ONION MASHED POTATOES

- Boil whole russet potatoes in their skins until they're easily pierced with a knife; let cool slightly before peeling. While the potatoes are boiling, saute sliced white onions in olive oil or butter over low heat until soft and deeply caramelized. Mash the potatoes with milk or cream, butter, and salt and pepper to taste. Stir the caramelized onions into the potatoes just before serving.

I love this recipe! It came from Southern Living magazine and is one of my family's favorite. It takes a little bit of time to prepare and cook but is well worth the effort. Very unique taste with the gorgonzola and the sweetness of the onions. Enjoy!

Steps:
- Bring potato, 1 teaspoon salt, and water to cover to a boil in a Dutch oven; cook 20 to 25 minutes or until tender.
- Drain and keep warm.
- Melt 2 tablespoons butter with oil in a skillet over medium heat; add onion, and cook, stirring often, 12 to 17 minutes or until tender.
- Add garlic, and cook 3 minutes.
- Stir in rosemary; remove from heat.
- Mash potato with a potato masher; stir in 1/2 cup butter, half-and-half, and cheese until blended.
- Stir in onion mixture, remaining 3/4 teaspoon salt, and pepper.
- Spoon enough mixture into a decorative, ovenproof dish or 13- x 9-inch baking dish to fill bottom; pipe or dollop remaining mixture over top.
- Broil, 3 inches from heat, 5 minutes or until top is lightly browned.

CARAMELIZED ONION AND COARSE-GRAIN MUSTARD MASHED POTATOES
From the Trenton Times: Caramelized onions practically melt into the warm potatoes, and coarse-grain mustard adds a pretty golden-flecked hue and subtle flavor. Cook time does not include time to make caramelized onions. I have made this using a combination of red potatoes and red gold potatoes and I don't bother to peel them. I also prefer to caramelize the onions in the crockpot on high for 3-4 hours.

- Boil potatoes in a large saucepan over medium heat in salted water to cover for 15 to 20 minutes, or until tender.
- Drain water. Return to pan to heat for 1 to 2 minutes, shaking occasionally to dry out any remaining water.
- Add the half-and-half and butter, and heat over medium heat just until the milk starts to simmer.
- Remove from heat. Add the mustard and onions and mash to desired consistency. Taste and add more mustard if necessary.
- Add salt and pepper to taste. Serve hot.
- Note: To caramelize onions, heat 1 Tbsp olive oil in a heavy-based skillet. Add 1 thinly sliced medium yellow onion. Cook and stir over medium heat for 5 minutes until onion starts to soften. Lower heat and sprinkle with 1/4 tsp salt and a pinch of granulated sugar. Cook 20 minutes or until deep golden brown, stirring frequently. Lower heat if necessary to keep onions from burning. These freeze beautifully, so you can make extra to freeze for later use.

- Add onions; stir to coat with butter/oil.
