GOLDEN CASTLE PUDDING

I participated in a recent swap and my partner, *maryL* sent me 2 wonderful cookbooks. This recipe was in the one entitled "Family Cooking". Using my trusty scale, I converted the ingredients list to US measurement and served this pudding to dinner guests and everyone raved. Warning: It is very sweet!

Steps:

  • Preheat oven to 350 degrees.
  • Cut circles of parchment paper to fit the bottom of 4 (5 oz) ramekins.
  • Spray the ramekins with non-stick cooking spray and place the circles in the bottom.
  • Mix together the flour, baking powder and salt; set aside.
  • Cream the butter and sugar until pale and creamy; stir in vanilla.
  • Gradually beat in beaten eggs, alternating with 1 tablespoon of flour; beating well after each addition.
  • When the mixture is smooth, add any remaining flour and fold in gently.
  • Add a tablespoon of water and mix to form soft dough that will drop easily off a spoon.
  • Divide the mixture among the 4 ramekins, place on baking sheet and bake in a preheated oven for 25 minutes or until firm and golden brown.
  • Allow the puddings to stand for 5 minutes; run a sharp knife around sides and turn out on dessert plate, discarding paper.
  • Heat the syrup or honey and pour over the puddings; garnish with a couple of tablespoons crème fraiche or ready-made custard.

CASTLE PUDDING

Quick and easy. My sons love these! If you don't have self raising flour, you can substitute 1/2 cup all-purpose flour, 3/4 teaspoon baking powder and 1/2 teaspoon salt.

SAND PUDDING RECIPE

This is a recipe I shared last summer, but it was a big hit so I am sharing it here today and making up a batch for my family! The ingredients were simple as were the instructions to create this dessert that will have people wondering if it is REALLY sand or not. I brought it to our family reunion last Saturday after the Walk and it was quickly gobbled up! My daughter asked if I would make it again the next day. I'm pretty sure she single handedly ate half the pail herself. ;) Seriously though, this was very quick & easy dessert to put together with a LOT of wow factor included. This is a super quick & easy summer time dessert that is sure to be the talk of the party!

PAWPAW PUDDING

When it comes to pawpaw, accept no substitutes. Trust us; we tried. We went to a bunch of experts - scholars who specialize in fruit, plus chefs and cookbook authors who know all about the proud culinary history of Appalachia - and we asked them, "If a home cook doesn't happen to have any pawpaw, what combination of other fruits and vegetables might work well as a replacement?" We picked up passing nods to sweet potatoes, bananas, papayas, avocados, really ripe mangoes. But in the end everyone came back with variations on "Forget it, there's nothing like a pawpaw." The goopy-textured, tropical-ish fruit whose name sounds like a punch line on "Hee Haw" can be found scattered all over the country, but recipes (for cakes, pies, puddings) abound largely in West Virginia and nearby states like Kentucky, Ohio and Indiana. If you happen to secure some pawpaw, best to get out of its way, as is the case with this pudding. Pawpaw is a holiday guest who responds well to minimal interference.
