Steps:
- Add cauliflower florets to a food processor and blend until it reaches a rice consistency.
- Transfer cauliflower rice to a microwave safe bowl and microwave 5 minutes at a time 4 times, stirring in between. This will help to draw out the moisture. Allow the microwaved rice to cool for about 30 minutes, until cool to the touch.
- Combine cauliflower rice with egg, parmesan and garlic powder.
- Divide mixture into 4 portions.
- Flatten out each portion into a ¼-1/2" square "bread" shape on a baking sheet lined with parchment.
- Bake at 450 Fahrenheit for 15-20 minutes, until golden brown. Allow to cool for 15 minutes before removing pieces from the pan.
- Use a spatula to remove the cauliflower bread and assemble sandwiches. Place 1-2 slices of cheese in between two slices of cauliflower bread.
- Place in a toaster oven for 5-10 minutes on broil until the cheese is melted and bread is toasty.

- Grate a cauliflower over a large bowl.
- Sprinkle a pinch of salt over the grated cauliflower and mix evenly. Leave to sit for 20 minutes.
- Pour the cauliflower into a clean kitchen towel and wring the water out.
- In a large bowl, combine the cauliflower, and remaining ingredients, (except your cheese and toppings) stir until well mixed.
- Using a spoon transfer two hearty scoops of mixture to form each "bread slice" onto a skillet on medium-low heat for about 10 minutes, each side.
- Add your cheese and any other toppings, allow a couple minutes for cheese to melt.

- Preheat an oven to 450 degrees.
- Add the cauliflower rice to a large microwave safe. Cover with plastic wrap and microwave for 6-8 minutes. Stir every two minutes until the cauliflower is cooked through.
- When cool enough to handle, place the cauliflower in a clean kitchen towel and wring out the excess liquid.
- To a bowl add the cooked cauliflower rice, eggs and grated parmesan cheese. Season with salt and pepper and mix until the ingredients are thoroughly combined.
- Lightly spray a parchment paper lined sheet tray with nonstick cooking spray.
- Divide the cauliflower mixture in 4. Using your hands press and shape the mixture to resemble a slice of bread. Repeat process until you have 4 slices of bread.
- Bake in the oven for 20 minutes until golden brown.
- Remove from oven and sprinkle the shredded cheddar cheese on to two pieces of the cauliflower.
- Using a spatula, carefully place a piece of cauliflower bread on top of each sandwich. Place back in oven and cook until the cheese has melted, about 3 minutes.

- Preheat oven to 450°F.
- Line a baking sheet with parchment paper and liberally grease it with olive oil. Set aside.
- 3. In a food processor, rice the cauliflower florets until they are a fine crumb.
- . Heat the olive oil in a large frying pan on a low-medium heat. Add the cauliflower rice (about three cups) and cook for 10 to 15 minutes, stirring continually or until soft. You want the water to evaporate as much as possible from the cauliflower without developing color. The cauliflower rice needs to be dry, otherwise you'll end up with mushy dough.
- Transfer the cauliflower rice to a mixing bowl, add egg, Parmesan, comté, salt, and mix well, then spread the mixture onto the lined baking sheet and shape into four bread squares. Place the baking tray in the oven and bake for about 12 to 15 minutes, or until golden.
- Remove and let cool for ten minutes, then gently peel them off the parchment paper.
- . Heat a pan over medium heat. Butter one side of each slice of the cauliflower bread and place the buttered side down on the pan.
- Cover the bread liberally with your chosen cheese, plus gherkin or jalapeño (if using) and top with the remaining slice of cauliflower bread, buttered side up.
- Cook until golden brown, about two to four minutes, then gently flip and cook until golden brown on the other side.

- Preheat oven to 450°F. Place cauliflower into food processor and pulse until crumbs about half the size of a grain of rice.
- Place cauliflower into large microwave-safe bowl and microwave for 2 minutes. Your cauliflower should be soft and tender (and hot!). (If you don't want to use the microwave to dry out the cauliflower and prefer to steam and wring with a cloth to dry, check out my wringing instructions here.)
- Stir cauliflower to mix up the bottom and top cauliflower. Place back into the microwave and cook for another 3 minutes. Remove and stir again so that all the cauliflower cooks evenly. Place back into microwave and cook for 5 minutes. At this point, you should see the cauliflower is starting to become more dry. Microwave for another 5 minutes. Cauliflower should still be slightly moist to the touch, but should look dry and clumped up (like photo above; similar to as if someone had chewed it up and spit it back out.) If you've made cauliflower pizza or breadsticks with the cloth wringing dry method, it should look the same.
- Allow cauliflower to cool for a few minutes. Then add in egg and cheese. Stir to combine until smooth paste forms. Stir in seasoning. Divide dough into 4 equal parts. Place onto large baking sheet lined with parchment paper. Using your knuckles and fingers, shape into square bread slices about 1/3 inch thick. Bake cauliflower bread for about 15-18 minutes or until golden brown. Remove from oven and let cool a few minutes.
