CHALLAH BREAD (EGG BREAD)

Don't cha just wanna tear a piece off??? mmmmm this is some good bread! I was ecstatic the first time I made this bread, it was soooo good! And now I knew what all the fuss was about with the famous chefs on tv...and why they prefer to use challah bread for so many things verses any other kind. I have tweaked and tweaked...

Challah Bread (egg bread) image

Steps:

  • 1. Combine warm water, sugar and yeast in large mixing bowl. Let stand 5-10 min. or until starts to foam. Then add in honey, oil, eggs, salt and 5 cups of flour. Turn mixer on medium low with dough hook attachment and mix well, once all mixed together add 1/2c flour at a time with mixer running on low-medium until dough is smooth and pulls away from sides of bowl, as seen in photo, then knead with mixer for 4-5 min. In total I added 1 1/2c flour extra, this will vary depending on the humidity levels in your area, Do not add more than 1 1/2 c. Once done kneading, turn into a sprayed or oiled bowl, flip dough over as to coat other side, cover with a piece of plastic wrap then a towel and place in warm area to rise until doubled in size, approx 45min to an hour (For warmth, I turn my oven to 170-200 and place the bowl on top of the oven, not in the hottest spot though)
  • 2. Remove wrap and towel, dump onto a lightly floured surface then cut dough into 6 pieces for 2 braids or into 2 if you just want loafs. For loafs, spray or grease the pans, shape dough into loaf shape and place dough halves into pans, cover and let rise until doubled in size, approx 45-60 min. For braids, take 3 pieces of dough, roll stretch and pull into 3 rope shapes as evenly as possible, pinch together three ends, braid! pinch together the ends and tuck ends slightly under, place onto sprayed, greased or parchment lined sheet pan, repeat with rest of dough and place onto same sheet pan. Cover with plastic wrap and let rise until doubled in size, approx 45 minutes in warm place.
  • 3. Preheat oven to 350. In a small bowl, beat 1 egg with 1T cream or milk and brush over loafs, sprinkle course sea salt or sesame seeds or poppy seeds over top, if desired. You can just do the egg wash and call it good as well! And when oven is preheated place loafs into oven, bake 30-40 min. until a beautiful brown color or internal temp is 160-175 (for buns bake approx 20 min or temp should be 185-190...remove from oven. Cool on wire racks. ENJOY!!!
  • 4. ***I use my 1/4 c cookie scooper, which is the same size as an ice cream scooper, when I make buns, it helps ensure the buns are evenly sized. ***I like to use parchment paper lined air bake cookie sheets for the braids and buns, so the bottom stays a light color. ***If I use loaf pans I even place the loaf pans onto an air bake cookie sheet in the oven to guard against the bottoms getting to dark.

1 Tbsp oil
4 eggs, room temp
1 1/2 tsp salt
5 c bread flour, plus more
EGG WASH/TOPPING

1 Tbsp cream or milk
optional course sea salt, seseame seeds or poppy seeds

CHALLAH I (BRAIDED EGG BREAD)

I bake challah every week for our Sabbath meal. It's so easy to make in a KitchenAid mixer. Challah tastes great in French Toast or Cinnamon Toast recipes. This challah recipe is my kid's favorite.

Challah I (Braided Egg Bread) image

Steps:

  • Preheat oven to 400°F Dissolve 1 teaspoon sugar in 1/2 cup water in bowl of mixer. Sprinkle yeast over water and mix,let stand 10 minutes until foamy.
  • Add the next 6 ingredients to mixing bowl. Mix with dough hook for 6 minutes. Dough should be a little sticky.
  • Place in oiled bowl, cover and let rise in warm place until double in bulk.
  • Punch down dough. Let rise again until double in bulk.
  • Punch down again. Divide dough into 3 equal parts.
  • Roll dough into three long strands. Braid the strands, tucking ends under. Cover with towel and let double in bulk.
  • Brush with beaten egg yolk. Sprinkle with seeds. Bake at 400 F for approximately 30 minutes, until golden brown. The challah is done when it sounds hollow when thumped on the bottom.

Easy Challah Bread image

Steps:

  • In a large bowl, stir the yeast into the water, and let the mixture stand until a creamy layer forms on top, about 10 minutes. Stir in honey and salt until dissolved, and add the beaten eggs. Mix in the flour, a cupful at a time, until the dough is sticky. Sprinkle the dough with flour, and knead until smooth and elastic, about 5 minutes.
  • Form the dough into a compact round shape, and place in an oiled bowl. Turn the dough over several times in the bowl to oil the surface of the dough, cover the bowl with a damp cloth, and let rise in a warm area until doubled in size, 45 minutes to 1 hour.
  • Punch down the dough, and cut it into 3 equal-sized pieces. Working on a floured surface, roll the small dough pieces into ropes about the thickness of your thumb and about 12 inches long. Ropes should be fatter in the middle and thinner at the ends. Pinch 3 ropes together at the top and braid them. Starting with the strand to the right, move it to the left over the middle strand (that strand becomes the new middle strand.) Take the strand farthest to the left, and move it over the new middle strand. Continue braiding, alternating sides each time, until the loaf is braided, and pinch the ends together and fold them underneath for a neat look.
  • Place the braided loaf on a baking sheet lined with parchment paper, and brush the top with beaten egg yolk. (For a softer crust, brush with melted butter instead.)
  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake the challah in the preheated oven until the top browns to a rich golden color and the loaf sounds hollow when you tap it with a spoon, 30 to 35 minutes. Cool on a wire rack before slicing.

Steps:

  • In a large bowl, sprinkle yeast over barely warm water. Beat in honey, oil, 2 eggs, and salt. Add the flour one cup at a time, beating after each addition, graduating to kneading with hands as dough thickens. Knead until smooth and elastic and no longer sticky, adding flour as needed. Cover with a damp clean cloth and let rise for 1 1/2 hours or until dough has doubled in bulk.
  • Punch down the risen dough and turn out onto floured board. Divide in half and knead each half for five minutes or so, adding flour as needed to keep from getting sticky. Divide each half into thirds and roll into long snake about 1 1/2 inches in diameter. Pinch the ends of the three snakes together firmly and braid from middle. Either leave as braid or form into a round braided loaf by bringing ends together, curving braid into a circle, pinch ends together. Grease two baking trays and place finished braid or round on each. Cover with towel and let rise about one hour.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Beat the remaining egg and brush a generous amount over each braid. Sprinkle with poppy seeds if desired.
  • Bake at 375 degrees F (190 degrees C) for about 40 minutes. Bread should have a nice hollow sound when thumped on the bottom. Cool on a rack for at least one hour before slicing.

Decadent Challah Bread image

Steps:

  • Dissolve the honey in the water in a large mixing bowl, and stir in the yeast. Set the mixture aside until the yeast forms a creamy layer on top, about 15 minutes. Stir in the salt, 2/3 cup of olive oil, and beaten eggs. Add the flour 1 cup at a time until the dough is slightly tacky, but not sticky wet.
  • Turn it out onto a floured surface, and knead until smooth and elastic, about 10 minutes. Lightly oil a bowl, place the dough in the bowl, turn the dough over a few times to oil the surface, then let rise until doubled in a warm, draft-free place, about 90 minutes.
  • To make the loaves, punch down the dough, and cut it into 2 equal-sized pieces. Cut the first piece into 4 equal parts. Set the second piece aside under a cloth to prevent drying out while you braid the first loaf.
  • To braid the first 4-strand loaf, roll the 4 pieces of dough into thin ropes about the width of your thumb, and about 14 inches long. Make the tops and bottoms of each rope thinner than the middle area. Pinch the tops of the 4 ropes together, and fan the 4 ropes out so they don't touch.
  • To make an "under-2, over-1 braid," take the left-most rope, and move it to the right to cross underneath the next 2 ropes, then move it left to cross back over the strand immediately to its left. Take the far right strand, and move it to the left and cross it under the two strands to its left (they are already crossed from the previous braid); then move it right to cross back over the strand immediately to its right. Repeat until the 4 strands are braided together all the way to the end, and pinch the ends tightly together. Repeat the steps to braid the second loaf, and let the braided loaves rise for 1 hour.
  • Preheat an oven to 350 degrees F (175 degrees C), and line baking sheets with parchment paper.
  • Make a glaze by whisking together the milk, 2 tablespoons of olive oil, the egg white, and the sugar in a bowl. Brush the braided loaves with the glaze, to make a shiny crust, and bake the loaves on the prepared baking sheets in the preheated oven until they are light golden brown, about 30 minutes.

Challah (Braided Egg Bread) image

Steps:

  • Mix together 2 1/2 cups flour with the sugar (honey), salt and yeast.
  • There is no need to dissolve the yeast first.
  • Add the water and oil.
  • Mix in 4 eggs.
  • Beat in another 1 1/2 cups of flour very well.
  • Add 4-5 cups of flour, until a very soft dough is formed.
  • Knead for about 10 minutes.
  • If using the dough hook, knead for about 7 minutes.
  • Let rise for 1-2 hours until doubled in size.
  • Alternately, let rise in the refrigerator overnight and then let warm to room temperature for about 1 or 2 hours.
  • Decide how many challahs you want, how many strands you want to braid in each.
  • Make a dough ball for each strand; roll them into ropes and braid.
  • Let rise covered for 1/2-1 hour.
  • Beat the remaining egg and brush on the challah.
  • Bake in a preheated oven at 325 F (150 C) for 30 minutes.
  • Apply egg wash once more and bake for another 30 minutes at 350 F (175 C).
  • This dough is enough for 4 medium sized challahs.
  • You can really let your imagination run rampant here, making intricate braids, placing the braids in a loaf pan, even then winding them into a circle.
  • You can add about 1/4 cup of raisins to the dough, but we leave them out.
