CHAMOMILE AND HONEY ICE CREAM
Fresh chamomile flowers are used to infuse the custard base for this rich frozen dessert. Serve with Buckwheat Cookies.

Steps:
- Combine milk and cream in a heavy-bottomed medium saucepan and bring to a boil over medium-high heat. Remove from heat and stir in chamomile. Cover mixture and let stand 10 minutes. Meanwhile, whisk together yolks, sugar, and salt in a large bowl until thoroughly combined.
- Uncover milk mixture and bring to a bare simmer over medium-high heat. Remove from heat and gradually pour 1 cup milk mixture into yolk mixture, whisking constantly. Add remaining milk mixture all at once, whisking until just combined. Let stand until slightly thickened, about 10 minutes. Pour through a fine sieve into a bowl set in a larger bowl of ice water. Stir in honey and let stand, stirring occasionally, until cold, about 15 minutes.
- Process mixture in an ice cream maker according to manufacturer's instructions. Serve immediately or transfer to an airtight container and store in freezer up to 1 week.
CHAMOMILE LIME RICKEY
A floral twist on a classic, this delicious fizzy limeade is the perfect front-porch sipper on a warm afternoon. The chamomile adds some sunshine to this refresher, and little ones will love it as well. You just might find yourself making - or craving - this every summer weekend.

- Combine the lime juice and chamomile simple syrup in a large (16- to 18-ounce) tumbler and stir to combine. Taste and add more lime juice or syrup, if you'd like.
- Fill with ice, top off with the seltzer and gently mix to combine. Garnish with lime slices, or an organic edible flower, if you are feeling extra fancy.
PINEAPPLE ICE WATER

Steps:
- Remove the core from the pineapple and scrape out the pulp and juice.
- place in a blender or food processer and puree.
- reserve the pineapple shells, cover in plastick wrap and chill in the refrigerator while preparing other ingredients.
- Pour pineapple puree into a small bowl, cover and keep chilled.
- In a medium sauce pan heat the water on low and add the sugar.
- Stir until dissolved.
- Add the pineapple puree and mix well.
- Transfer to a freezerproof container.
- Put lid on tightly and freeze for 3 hours.
- Whisk the egg white until stiff than gradually whick in the pinneapple ice water until frothy.
- Cover and freeze until firm.
- Transfer from the freezer to the refrigerator for 10 minutes to soften, before serving.
- Scoop pineapple ice back into reserved pineapple shell for serving.

ICE WATER
Sometimes I get back from a run, home from work, or take too long of a shower and I just get thirsty. In a pinch, this is what I do to quench my thirst.

Steps:
- Step 1: Take a bottle of water and place on counter.
- Step 2: Get a glass, cup, bowl, Yahtzee Shaker, or any other liquid retaining container and place on counter next to the bottle of water.
- Step 3: Fill up ice cube tray with water and place in freezer (wait 3 hours) (Note: if you have an ice cube dispenser, skip step 3).
- Step 4: Pour water into container.
- WARNING: Stand back in case ice explodes.
- Step 5: Wait 1 minute.
- Step 6: Swirl with spoon.
- Step 7: Find a comfortable couch.
- All done.

CHAMOMILE GRANITA (ICE WATER)
You can make this with any tea. The chamomile is a wonderful treat if you can't sleep at night. For guests, I like to serve this in a tea cup with a thin crisp cookie and a slice of lemon for garnish.

Steps:
- In a medium saucepan boil water. Once boiling, remove from heat, add tea and steep for 5-10 minutes depending upon your own taste.
- Strain tea into a bowl add the lemonjice and honey. Stirr to dissolve.
- Pour into serving bowl or 2" deep roasting pan and freeze for 6-8 hours stirring/scraping the mixture 2 or 3 times with a fork.
- Just before serving place in the refrigerator for 5 minutes and scrape ice crystals with a spoon or fork.
