- Preheat the oven to 350 degrees F. Spray a broiler pan with nonstick spray.
- Mix together the bread and milk in a bowl and set aside.
- Add the ground beef, bacon, eggs, chopped red onion, 2 tablespoons ketchup, 1 tablespoon mustard, 1/2 teaspoon salt and 1/2 teaspoon pepper to a large bowl. Add the soaked bread and mix with your hands, trying to keep the mixture light. Gently mix in the cubed Cheddar, making sure to distribute it evenly throughout the meat.
- Form the meat mixture into a loaf approximately 6 to 8 inches wide and 1 1/2 inches thick on the prepared pan. Mix the grated yellow onion with the remaining 1 cup ketchup, 1/4 cup mustard, 1/2 teaspoon salt and 1/2 teaspoon pepper in another bowl. Spread half of the sauce on top of the meatloaf. Tent the pan with foil and bake for 1 hour.
- Remove the foil, add the rest of the sauce and continue baking until the internal temperature reaches 160 degrees F and the meatloaf is no longer pink in the middle, another 35 to 40 minutes. Sprinkle on the grated Cheddar and return to the oven for 5 minutes to melt. Let the meatloaf rest for 10 minutes before removing to a platter.
- Slice and serve with the sliced red onions and dill pickle chips.

- Preheat oven to 400 degrees; lightly oil a rimmed baking sheet.
- In a medium skillet, heat 2 T olive oil over medium heat.
- Add the onion and cook, stirring until slightly softened, about 3 minutes.
- In large bowl, combine the ketchup, bread crumbs, eggs and pickles; mix in the onion.
- Crumble in the beef, add the cheese and mix together.
- Transfer to the prepared baking sheet and shape into a 4-by-12-inch loaf.
- Bake until an instant thermometer inserted into the center registers 160 degrees, about 35 minutes.
- Meanwhile, halve the potatoes and place them in a large pot with enough salted water to cover by an inch.
- Bring to a boil, then lower the heat and simmer until tender, 10-15 minutes.
- Drain, return to the pot and mash with the cream.
- Let the meatloaf rest for 5 minutes before slicing.
- Serve with the mashed potatoes.
- Note: Freeze leftovers for up to a month, then reheat in 350 degrees oven.

- In a bowl, combine 1/4 cup ketchup, egg, bread crumbs and onion powder. Crumble beef over mixture and mix well. On a large piece of waxed paper, pat beef mixture into a 10x6-in. rectangle. Spread remaining ketchup over meat to within 1/2 in. of long sides and 1-1/2 in. of short sides. Top with mustard and relish., Place four cheese slices on top; set remaining cheese aside. Roll up loaf, jelly-roll style, starting with a short side and pulling away waxed paper while rolling. Seal seams and ends well. Place loaf, seam side down, in a greased 11x7-in. baking pan., Bake at 350° for 45 minutes or until meat is no longer pink and a thermometer reads 160°. Cut the reserved cheese slices in half diagonally; place on top of loaf. Return to the oven for 5 minutes or until cheese is melted. Let stand for 10 minutes before slicing.

This meatloaf is extremely juicy, and the potential variety of different flavors is as big as your imagination. I've done American cheese with ketchup and mustard on top and served with dill pickle chips. Another one might be Swiss cheese and mushroom topping.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine the beef, bread crumbs, onion, eggs, salt and pepper, and mix well. Pat out meat mixture into a 14x18 inch rectangle on a piece of wax paper. Spread cheese over the meat, leaving a 3/4 inch border around the edges. Roll up jelly roll fashion to enclose the filling and form a pinwheel loaf. Press beef in on both ends to enclose the cheese. Place in a 10x15 inch baking dish.

- Heat oven to 350 degrees.
- Spray a 13 x 9 x 2 inch baking pan with nonstick spray.
- In a large bowl, beat eggs slightly with a fork.
- Add water and oatmeal and let stand until liquid is absorbed (about 5 minutes) Stir in remaining ingredients, except meat; mix well.
- Add meat, using your hands or a sturdy spoon and mix until well blended.
- Shape into a loaf in your baking pan.

- Preheat oven to 350*.
- Cut each of three cheese slices into four strips; set aside.
- In a large bowl combine egg and tomato juice; stir in oats, onion, Worcestershire sauce, bouillon granules, garlic powder and pepper.
- Add ground meat; mix well.
- In a shallow baking dish shape half of the meat mixture into an 8x4-inch loaf. Make a 1/2 inch indentation down center of meat mixture.

- Heat oven to 450°F. In 12-inch ovenproof skillet, heat oil over medium heat. Cook garlic in oil 1 minute. Add potatoes, onion, rosemary, salt and pepper. Stir to blend. Cook over medium heat about 10 minutes or until potatoes are tender, turning potato mixture halfway through cook time. Stir in cooked sausage.
- In large bowl, beat eggs and milk with whisk. Pour over potato mixture in skillet. Cook 2 minutes. Place in oven.

- Mix together Beef, Oatmeal, Egg, Evaporated Milk, Worcestershire Sauce, Salt, Garlic Power, Pepper, Chili Powder. Press 3/4 of the Mixture into Bundt Pan, making a well in the middle.
