Steps:

  • Heat oven to 425°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray. In baking dish, stir sauce mix (from potato mix box), ranch dressing mix, boiling water and butter with whisk just until butter melts. Stir in milk, half-and-half and potatoes (from potato mix box).
  • Bake 15 minutes; stir. Bake 15 to 20 minutes longer or until top is golden brown and potatoes are tender. Stir in sour cream; top with bacon and green onions.

Steps:

  • Preheat oven to 375° F. Bring sliced potatoes to a boil in cold, salted water to cover for 5 minutes. Carefully drain, and transfer slices to a paper-towel lined countertop or cutting board. Pat to dry. Spray a baking sheet with cooking spray, and lay out potato slices on it. Sprinkle with salt & pepper to taste. Bake 12-14 minutes in preheated oven until potatoes begin to slightly crisp and brown on the edges. Remove from oven, and cover evenly with cheese and bacon bits. Return to oven and cook until cheese is melted and bubbly, about 10-12 minutes. Meanwhile, to prepare chipotle ranch dipping sauce, combine light ranch dressing and Chipotle seasoning. Garnish potatoes with optional chives or parsley and serve immediately with dipping sauce.

  • Preheat oven to 350°. On an ungreased 15x10x1-in. baking pan, bake cubed rolls until toasted, 7-10 minutes. Meanwhile, stir dressing mix into mashed potatoes., Fold in 2 cups cubed rolls, celery, mushrooms and bacon. Transfer to a greased 13x9-in. baking dish; top with remaining cubed rolls. Place baking dish on a baking sheet. Bake, uncovered, 35 minutes. Sprinkle with cheese; bake until cheese is melted and top is golden brown, 5-10 minutes longer. If desired, top with green onions.

Steps:

  • Scrub potatoes, pat dry and pierce with a fork.
  • Bake at 425 for 55-65 minutes or until soft.
  • While potatoes are baking, cook bacon in a skillet until browned, cool and crumble.
  • In 2 Tbsp of bacon grease, saute onion and green pepper until still tender crisp, then add mushrooms and saute until mushrooms are cooked, then set aside.
  • When potatoes are cooked, cut a slice from the top of each.
  • Scoop out the flesh, keeping the shell intact.
  • Mash potato, adding 1 cup of the cheese, milk, butter, egg, salt, vegetable mixture and half of the bacon.
  • Spoon mixture into the shells, top with remaining cheese and bacon.
  • Bake at 350 for 20 minutes or until slightly brown on top.

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9x13 inch baking dish.
