GUACAMOLE WITH BLACK BEANS

Classic guacamole is given a frightful twist for Halloween with black beans, jalapeño, and chipotle in adobo, which add serious heat. Dark blue corn tortilla chips are a must for dipping.

Guacamole with Black Beans image

Steps:

  • Combine beans, salt, onion, jalapeno, chipotle, garlic, and lime juice in a bowl. Mash avocados; stir into bean mixture with cilantro. Serve immediately, with chips.

1 can (15 1/2 ounces) black beans, drained and rinsed
1 1/2 teaspoons coarse salt
1/2 large white onion, finely chopped
1 teaspoon minced jalapeno chile (seeds removed, if desired)
1 1/2 teaspoons minced chipotle in adobo
1 small clove garlic, minced
2 tablespoons plus 1 teaspoon fresh lime juice (from 1 to 2 limes)
2 ripe avocados, pitted and peeled
1/4 cup chopped cilantro
Blue corn tortilla chips, for serving

This is a hearty guacamole recipe that my friends request from me whenever we have a gathering! It's chunky and colorful and adds gusto to any Mexican dish! Serve with favorite tortilla chips and enjoy!

Steps:

  • Stir red bell pepper, red onion, garlic, sweet corn, black beans, and avocado slices together in a large bowl.
  • Mix lime juice, salt, black pepper, and cilantro into avocado mixture until desired texture is achieved.

Steps:

  • Preheat oven to 350 degrees F.
  • On an oven-safe platter, spread half of the tortilla chips. Top with half of the black beans and half of the goat cheese. Top with the remaining tortilla chips, black beans, goat cheese, and the Cheddar. Bake for 20 minutes, or until warmed through and the cheese has melted. Remove from heat and top with the scallions and serve with the Guacamole Salsa.
  • In a mixing bowl, combine the corn kernels, chipotle pepper, onion, garlic, lime juice, salt, and pepper. Stir until combined and then fold in the chopped tomatoes, avocado, and cilantro. Serve immediately.

  • In a large nonstick skillet coated with cooking spray, saute the yellow pepper, onion and garlic in oil for 2 minutes. Stir in the tomatoes and corn; cook 2 minutes longer. Cheesy, Spicy Black Bean Bake image

Steps:

  • Heat the oven to 475 degrees. In a 10-inch ovenproof skillet, heat the olive oil over medium-high. Fry the garlic until lightly golden, about 1 minute. Stir in the tomato paste, paprika, red-pepper flakes and cumin (be careful of splattering), and fry for 30 seconds, reducing the heat as needed to prevent the garlic from burning.
  • Add the beans, water and generous pinches of salt and pepper, and stir to combine. Sprinkle the cheese evenly over the top then bake until the cheese has melted, 5 to 10 minutes. If the top is not as browned as you'd like, run the skillet under the broiler for 1 or 2 minutes. Serve immediately.
