CHEERY CHERRY COOKIES

Steps:
- In a large bowl, cream brown sugar and butter until light and fluffy. Beat in the egg, milk and vanilla. In another bowl, mix the flour, salt and baking soda; gradually beat into creamed mixture. Stir in the cherries, coconut and pecans. , Drop by teaspoonfuls onto ungreased baking sheets. Bake at 375° for 10-12 minutes or until golden brown. Remove from pans to wire racks to cool.

- 1. Preheat oven to 325 degree F. Lightly grease a sheet pan. In a large bowl, beat together the butter and sugar until light and fluffy. Beat in the extracts. Mix the salt and flour and add to the butter mixture a little at a time until all is beaten in.
- 2. In a bowl, spoon out preserves and I chop the cherries up with a spoon, just so they aren't left whole.
- 3. Roll in the palm of your hand about 1 inch round balls and place on prepared pan about 1 inch apart. Use your thumb and indent the dough, not clear through, just enough that you can fill each cookie with 1/2 - 3/4 tsp of preserves.
- 4. Bake just until they begin to brown on the bottom, yet are nice and white on the sides and top - about 15 minutes.
- 5. Remove cookies to cooling rack and make the glaze while they cool.
- 6. Whisk together the sugar, almond extract and milk. Take a small baggie and roll down the top, spoon in the glaze and cut a small hole on the one corner. Pipe glaze over each cookie in a swirled motion.
- 7. Dig in, they are delicious!

A childhood favourite and a Christmas tradition that can be made year round - so quick and easy. Tastes like shortbread, but a bit tangy.

Steps:
- Cream butter and sifted icing sugar in a medium/large bowl.
- Add vanilla and cream it in.
- Sift dry ingredients (salt, flour, baking powder) in a separate bowl, then stir them in to the butter mixture.
- Add chopped cherries and mix well with spoon or fork.
- Roll teaspoons of dough into balls and place on lightly greased cookie sheet.
- Press into cookie shapes with floured fork.
- Bake at 350 degrees until golden.

Steps:
- To make dream cookies: in a large mixing bowl with an electric mixer, beat sugar, butter and vanilla until light and fluffy.
- Add the canola oil slowly while mixing with the mixer.
- Mix flour and baking powder in separate bowl.
- Stir in flour mixture by hand to form a smooth dough.
- Place the dough in refrigerator for about 30 minutes.
- Preheat oven to 300 F (150°C).
- Roll dream cookie dough into 1-inch balls and place them 2 inches apart on a cookie sheet.
- Bake for 20 minutes or until the dream cookies are lightly browned with cracks on the surface.
- Note: Do not open the oven until cookies are done!

- Preheat oven to 350F. In a medium bowl, mix together the butter and 1/3 cup of sugar. Add in the 1 cup flour and mix with a fork until crumbly. Place the mixture in the bottom of a 9x13" pan and pat out evenly. Bake in the oven for 15 min. or until golden. Remove to cool slightly.
- Meanwhile, add the eggs to a large bowl and beat well; add in the 2/3 cup sugar and the vanilla and mix well. In a small bowl whisk together the dry ingredients, baking powder, remaining 1/3 cup flour, and salt. Add this to the egg mixture. Carefully fold in the pineapple, coconut, nuts and cherries. Spread over the baked and slightly cooled crust. Bake for 30 min. Cool completely on a rack and then cut into squares.
