CHICKEN OR PORK MARINADE
I have no idea where I got this recipe from but I have used it for years. The last time it was brushed on our Cornish Game Hens at Thanksgiving.

- 1. Mix all ingredients together in a small bowl and brush on the chicken or pork the last 15 minutes. It works great on the grill.
AMAZING PORK CHOP OR CHICKEN MARINADE
This recipe came from my sister-in-law Denise who is an awesome cook, mother and wife! Originally we were using it only for pork but last night I had boneless, skinless chicken breasts thawed and thought, "why not?" The brown sugar flavor really came through with the chicken. I'm guessing it would also be great with venison. I often double the marinade for plenty to boil and pour over the grilled meat.

- Mix all ingredients together. Marinade 4 Pork Chops or 3-4 Boneless, skinless chicken breasts for 1-2 hours, then grill.
- Boil any leftover marinade for at least 5 minutes and pour over grilled meat.

- Whisk or stir together all ingredients.

- Place brown sugar in bowl.
- Add whiskey to brown sugar and mix.
- Add olive oil to whiskey and brown sugar mixture.
- Add remaining ingredients.
- Place meat in air tight container.
- Pour mixture over meat.
- Seal in air tight container.
- Shake container.
- Place meat with marinade in refrigerator for 3 hours to overnight.
- Cook meat on grill.

This recipe comes from my Uncle Tommy. He used this recipe to marinate chicken kabobs and served them over yellow rice. One tip he gave me was to put a little of the marinade in a dish with the onion halves and microwave for a minute or two. It softend them up before putting on the skewers with the rest of the meat and veggies.

CHICK-N-PORK MARINADE
This is a marinade that I developed & tweaked over many years to keep the chicken & pork fussies in my family happy! The name was donated by my children (aka "The Lil Fussies") when they were young & hasn't changed even though they're taller than me now! As this recipe is often requested by friends & family, I thought I might share it here. Enjoy! SPECIAL NOTE: I add 1/2 TB (apprx 2 packets) of "True Lime" = powdered crystallized lime (comes in lemon & orange too) to marinade but was unable to get ingredient to show correctly... adds extra zip but is OPTIONAL :)

- Mix all ingredients in large zip-lock type bag by shaking vigorously.
- HINT: I use a Magic Bullet-type chopper/blender to mix/chop all marinade ingredients & pour in bag.
- Add chicken &/or pork of choice (6-8 med chicken breasts or chops), seal bag well & shake to distribute marinade with meat.
- Marinate at least 4 hours in refrigerator, but overnight is the best!
- Bring chicken/pork to room temperature before cooking.
- Remove from marinade & grill or broil to desired done-ness. (apprx 7 mins each side, on grill, for medium boneless chicken breasts or 3/4 inch pork chops = 14 total minutes).
- May also freeze batches of chicken or pork in marinade then thaw & cook as usual.
