Chicken Ala King- dairy- & soy-free image

Steps:

  • 1. Heat the oil in a large saucepan. Add the onion and sprinkle with salt and pepper. Sauté until the onion starts to become translucent, about 3-5 minutes.
  • 2. Add the sliced mushrooms and cook until they soften. Sprinkle the onions and mushrooms with the flour. Stir and until everything is coated.
  • 3. Slowly add the chicken broth to the pan while whisking. Next add the coconut milk. Sprinkle the sauce with garlic powder and then stir to combine.
  • 4. Add the chicken and the frozen peas and cook over medium heat until the chicken is cook through, about 15-20 minutes.
  • 5. If at any point the sauce it too thick, add more chicken broth until it reached desired consistency.
  • 6. Serve over white rice.

3-4 Tbsp canola oil
1 small onion, chopped
salt and pepper
8 oz cremini mushrooms, chopped
2-3 Tbsp all-purpose flour
3/4 c chicken broth, low salt
1/4 c silk pure coconut milk- original flavor
1/2 tsp garlic powder
2 boneless, skinless chicken breasts, chopped
3/4 c frozen peas
white rice, cooking according to the package

CHICKEN A LA KING I

Easy and elegant chicken dish. It's a great way to use leftover chicken or turkey. Green pepper and red pimientos make this a pretty dish to serve at Christmas or anytime. Serve over cooked rice, toast, or noodles. Can be made ahead and reheated.

Steps:

  • Cook and stir drained mushrooms and green pepper in butter or margarine over medium heat for 5 minutes. Remove from heat.
  • Blend in flour, salt, and pepper. Cook over low heat, stirring constantly, until mixture is bubbly. Remove from heat.
  • Stir in instant bouillon, milk, water, and reserved mushroom liquid. Heat to boiling, stirring constantly. Boil and stir for 1 minute.
  • Stir in chicken and pimiento. Heat through.

Easy Chicken Ala King image

Steps:

  • Cut chicken into bite size pieces.
  • Place in slow cooker.
  • Using a medium bowl, stir soup, flour and pepper until blended.
  • Pour over chicken but DO NOT STIR.
  • Cover and cook on Medium for 2 and 1/2 hours or on LOW for 5 to 5 and 1/2 hours or until chicken is very tender.
  • Stir in peas and onions, pimiento, paprika celery salt, if desired and cayenne pepper.
  • Cover and cook for 20 to 30 minutes or until vegetables are tender.
  • Serve over rice or in patty shells.
  • Serve with fresh fruit.
