Steps:
- Season breasts with Tony Chachere's. Heat olive oil in cast iron skillet over medium high heat. Add chicken and cook until brown, about 3 minutes each side. Remove chicken from skillet and set aside.
- Add sliced sausage to skillet and brown, approximately 5 minutes. Remove and set aside.
- Lower heat to medium. add onions, celery, and bell pepper, and saute until onions are translucent. Return chicken and sausage to the skillet, and add garlic and water. Stir to incorporate. Reduce heat to low, cover and cook for 45 minutes. Add green onions and parsley.
- Serve over cooked rice.
WW MUSTARD BAKED CHICKEN- 5 POINTS
Before WW,the fat version of this was one of our family favorites. I've done some tweaking and come up with a chicken dish that is very near to it's FAT cousin and only 5 points. (update 4/21/09) When I first posted this recipe, I figured it to be 2 points, but have since learned it's 5 points, sorry for the error.

Steps:
- Spray 9x11 pan with cooking spray.
- Combine Sour Cream, Evaporated Milk and mustards in a medium sized bowl.
- Season chicken with salt free seasoning and seasoned salt; dip chicken pieces in cream mixture.
- Roll in cornflake crumbs.
- Place chicken pieces in coated pan and sprinkle with thyme leaves, and drizzle with olive oil.
- Bake for 15-20 minutes until juices run clear.

- Heat oil in a large nonstick skillet over medium-high heat.
- Season both sides of chicken with salt and pepper; add chicken to skillet and cook until golden, flipping once, about 2 minutes per side.
- Drain oranges and reserve 1/4 cup liquid.
- Add oranges with reserved liquid to skillet and simmer 2 minutes.
- Whisk together broth, soy sauce and cornstarch in a small bowl; add mixture to pan and simmer until sauce thickens and chicken is cooked through, about 3 minutes more.
- 5 Points per serving. Yields 1 piece of chicken and about 1/4 cup of sauce per serving.

CHICKEN AND ANDOUILLE SAUSAGE WITH PEPPERS (WW 5 POINTS)
My personal rendition of a WW recipe that I love because it packs all the flavors of NOLA while managing to be both fast and light. The level of heat here varies so much based on your brand of Cajun spice and sausage - so taste and adjust accordingly. For those who *do* count points, try finding the lowfat chicken andouille sausage. Half the points of the regular so you can add more to the dish. (Points confirmed on WW Recipe Builder.)

Steps:
- Cut chicken into 1 inch or slightly smaller cubes. Season with garlic powder and Cajun spice mix.
- Place nonstick over medium high heat. Give a quick shot of cooking spray and add the seasoned chicken. Cook for a minute and add the andouille sausage. Continue to cook for three to four minutes until the chicken is opaque.
- Remove chicken and sausage from pan and cover to keep warm. Gently wipe the pan to remove the excess oil. Add the onions and peppers to the pan and cook for four to five minutes.
- Stir the canned tomatoes and tomato paste into the skillet. Return the chicken and sausage and simmer for six to eight minutes.
- Serve with hot cooked rice for additional points.
