FETA CHICKEN BURGERS
My friends always request these tasty chicken burgers. I sometimes add olives to punch up the flavor! The burgers are exceptional with the mayonnaise-cucumber topping. -Angela Robinson, Findlay, Ohio

Steps:
- Preheat broiler. Mix cucumber and mayonnaise. For burgers, mix red pepper and seasonings. Add chicken and cheese; mix lightly but thoroughly (mixture will be sticky). Shape into six 1/2-in.-thick patties., Broil burgers 4 in. from heat until a thermometer reads 165°, 3-4 minutes per side. Serve on buns with cucumber sauce. If desired, top with lettuce and tomato. Freeze option: Place uncooked patties on a waxed paper-lined baking sheet; cover and freeze until firm. Remove from pan and transfer to an airtight freezer container; return to freezer. To use, broil frozen patties as directed, increasing time as necessary.

These Greek-style chicken burgers surprise with a feta cheese filling.

- Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
- Mix the chicken, bread crumbs, egg, lemon juice, sun-dried tomatoes, basil, oregano, salt, and pepper together in a bowl; form the mixture into 5 patties. Divide the feta cheese between the 5 patties; place a portion of the feta cheese atop each patty and fold the chicken mixture around the cheese so that the cheese is in the center.
- Cook on the preheated grill until no longer pink on the inside and the juices run clear, 5 to 7 minutes per side. An instant-read thermometer inserted into the center should read 165 degrees F (75 degrees C).

- Combine first 7 ingredients. Add chicken; mix lightly but thoroughly. Gently stir in cheese., Shape into four 1/2-in. thick patties (mixture will be soft). Brush patties with oil. - In a large skillet, heat oil over medium-high heat. Add shallots; cook and stir until tender, 1-2 minutes. Add spinach and garlic; cook until spinach is wilted, 30-45 seconds longer. Transfer to a large bowl; cool slightly., Stir feta cheese and seasonings into spinach. Add beef; mix lightly but thoroughly. Shape into eight 1/2-in.-thick patties., Grill burgers, covered, over medium heat until a thermometer reads 160°, 6-8 minutes on each side. Grill buns over medium heat, cut side down, until toasted, 30-60 seconds. Serve burgers on buns. If desired, add toppings.Freeze option: Place patties on a baking sheet lined with plastic wrap; wrap and freeze until firm. Remove from pan and transfer to a freezer container; return to freezer. - Preheat the oven to 375 degrees F. Place garlic cloves in a baking dish and drizzle olive oil over cloves. Roast in oven for about 10 minutes, or until fragrant.
- Heat a teaspoon of olive oil in large frying pan over medium high heat. Add spinach to pan and toss frequently until wilted, about 4-5 minutes. Use the tongs to gently transfer the spinach to a colander. Squeeze the water out of the spinach and let it rest until room-temperature.
