OLD-FASHIONED TOMATO GRAVY

My mother-in-law gave me this tomato gravy recipe. It's her very favorite breakfast. We-my husband, our two sons and I-also enjoy it for a light supper. Especially on a cold day, it's great with warm peach cobbler or bread pudding. -Laurie Fisher, Greeley, Colorado

Old-Fashioned Tomato Gravy image

Steps:

  • In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard drippings, reserving 2 tablespoons in pan. Add onion to drippings; cook and stir over medium-high heat until tender, 3-5 minutes. Stir in flour, salt and pepper until blended; cook and stir over low heat until mixture is golden brown (do not burn). Gradually whisk in tomato juice. Stir in tomatoes. Bring to a boil over medium heat. Reduce heat; simmer, uncovered, until thickened, 10-15 minutes, stirring occasionally. Stir in bacon. Serve over biscuits.

Stewed Chicken In Tomato Gravy image

Steps:

  • 1. Cut up fryer into individual serving sizes and remove skin
  • 2. Season Chicken pieces with salt, pepper and garlic powder.
  • 3. In a large dutch oven pot, heat olive oil.
  • 4. Place Onions, celery and bell pepper in olive oil and cook slightly.
  • 5. Add chicken pieces and brown lightly.
  • 6. Pour in Stewed tomoatoes, tomatoe sauce and tomatoe paste. Mix well
  • 7. Add Water and bring to a boil. Lower heat to simmering and cook, covered until chicken is well done and falling off the bones, about 1 hour and 15 minutes.
  • 8. Serve hot over rice or pasta. Enjoy!
  • 9. If you prefer your dishes spicy, you can always add a can of Rotel Tomatoes when mixing other tomatoes.

Steps:

  • Cook bacon until crisp. Remove to paper towels to drain; discard all but 2 Tbsp drippings.
  • Cook onion in drippings until tender.
  • Stir in flour, salt and pepper; cook and stir over low heat until mixture is golden brown.
  • Gradually add tomatoes and juice; stir well.
  • Bring to a boil over medium heat. Cook and stir for 2 minutes.
  • Reduce heat; simmer uncovered for 15 to 20 minutes or until thickened; stirring occasionally.
  • Stir in bacon.
  • Add fried chicken and heat through or serve over biscuits.

Chicken Thighs and Tomato Gravy image

Steps:

  • Heat 1 tablespoon oil in a skillet over medium flame.
  • Sprinkle the chicken thighs with a little Tony's and black pepper, then brown on each side in the skillet. It is ok if the chicken is not totally cooked through.
  • Remove the chicken thighs to a plate and add the rest of the oil to the skillet.
  • In the same skillet, sautee the diced onion until translucent.
  • Sprinkle the flour over the onion and oil. Stir to combine and cook for a couple of minutes, stirring constantly.
  • Whisk in about 1/2 cup of the chicken stock.
  • Add the Rotel tomatoes, diced tomatoes, tomato paste, and the rest of the Tony's and black pepper. Whisk to get rid of any lumps.
  • If the gravy seems too thick, add more chicken stock.
  • Add the chicken thighs back to the skillet, cover, and simmer over low flame about 20 minutes. The chicken thighs are done when the meat pulls off the bone easily.

Once hot, add the chicken breasts, top-side down, and let cook undisturbed for 4 minutes, until lightly browned. Flip and cook an additional 4 minutes. Turn again and continue cooking 3 to 5 additional minutes, flipping every few minutes, until the chicken is cooked through and reaches an internal temperature of 165 degrees F. The total cooking time will vary depending upon the thickness of your chicken. Remove to a plate and cover to keep warm.
  • Without wiping the pan, reduce the skillet heat to medium.
