CHICKEN AND LENTILS

This recipe is an unusual dish that all the family loves and is requested by all from the smallest to the adults. Don't let the 'lentil' ingredient scare you. It is absolutely delicious and very nutritious. It is the dish most often requested in our home. The recipe directions look complicated, but are very simple.

Steps:

  • Heat the oil in a skillet over medium heat, and cook the chicken pieces 5 minutes on each side, or until juices run clear. Remove chicken from skillet, and set aside.
  • Place onion in the skillet, and cook 5 minutes, until tender. Mix in the carrot and garlic. Stir in the lentils and broth, and season with salt. Bring to a boil, cover, reduce heat to low, and simmer 20 minutes.
  • Return chicken to skillet. Cover, and continue cooking 20 minutes. If the mixture becomes too dry, add a little water to just moisten.
  • Stir tomato sauce into the skillet. Season with rosemary and basil. Continue cooking 10 minutes, or until lentils are tender. Stir in lemon juice, and serve warm.

  • Preheat the oven to 450°. In a large saucepan, heat 1 tablespoon of the oil. Add the bacon and cook over moderate heat until golden brown, about 4 minutes. Add the onion and cook, stirring, for 3 minutes. Add the stock, whole garlic cloves, carrot, leek, bell pepper, lentils and thyme and bring to a boil. Simmer over low heat for 30 minutes.
  • Meanwhile, in a baking dish, drizzle the chicken with 1 tablespoon of oil and season with salt and pimentón. Roast on the top rack for about 40 minutes, until cooked through.
  • Discard the thyme sprig from the lentils. Transfer the garlic, carrot, leek and bell pepper to a blender. Add 1/4 cup of the cooking liquid and puree. Drain the lentils and return them to the pot. Stir in the pureed vegetables.
  • In a small skillet, heat the remaining 1/4 cup of oil. Add the chopped garlic and cook over low heat for 1 minute. Add 1 teaspoon of pimentón. Scrape the mixture into the lentils and simmer for 5 minutes. Add the vinegar and season with salt. Serve the lentils in bowls topped with the chicken.

  • Coat a Dutch oven or similar style pan with oil spray. Heat on medium, and add the sausage. Turn occasionally to brown the sausage, which will take about 5 minutes. Remove to a platter, and add the chicken thighs. Sprinkle the chicken with a pinch of salt, and brown on one side for 2 to 3 minutes. Turn over and brown on the other side for 2 minutes. Move to a platter.
  • Add the olive oil to the same pan used for browning the chicken. Heat on medium low, and add the onions. Cook for about 3 minutes, then add the carrots. Sauté for another 3 minutes, stirring occasionally. Add the mushroom, garlic, thyme, rosemary and sage. Cook for a minute or two then add the wine. Simmer for about 3 minutes.
  • Add the chicken back into the pan with the vegetables along with the lentils and broth. Bring to a simmer, then cover. Simmer for 15 minutes. Slice the browned sausage, and stir it into the pan. Cover, and simmer for another 15 minutes.
  • After 30 minutes of total simmer time, remove the cover and stir the stew. If you want the dish to be a bit thicker, simmer uncovered for an additional 5 minutes. Ladle the stew into bowls along with the rice or farro, if using, and sprinkle a bit of fresh parsley over the stew. Enjoy with some crusty French bread and Rhone red wine. Bon appétit!

  • Cook pancetta in a large Dutch oven over medium, stirring occasionally, until crispy and fat has rendered, about 8 minutes. Remove pancetta with a slotted spoon to a small bowl, reserving rendered fat in Dutch oven.
  • While pancetta cooks, make a bouquet garni: Place thyme sprigs, bay leaf, peppercorns, and cloves in cheesecloth. Gather together and tie with kitchen twine; set aside.
  • Increase heat to medium-high, and add butter and olive oil to Dutch oven. Season chicken with pepper and 1 teaspoon salt; place in Dutch oven, skin side down. Cook, undisturbed, until golden brown, about 4 minutes. Flip and cook 2 minutes. Transfer chicken to a large plate, and set aside. (Chicken will not be fully cooked.)
  • Add carrots, parsnips, shallots, and remaining 1 teaspoon salt to Dutch oven, and cook over medium-high, stirring occasionally, until vegetables start to soften, about 4 minutes. Add flour and garlic, and cook, stirring often, until fragrant and flour has fully cooked, about 1 minute. Stir in wine, and cook, stirring and scraping to loosen browned bits from bottom of Dutch oven, until reduced by half, about 2 minutes. Add chicken stock, bouquet garni, reserved chicken thighs, and potatoes. Increase heat to high, and bring to a boil. Cover, reduce to medium-low, and simmer until a meat thermometer inserted in chicken registers 160°F, about 15 minutes. Remove chicken from Dutch oven, and set aside.
