GREEK LEMON CHICKEN SOUP AKA AVGOLEMONO

Greek Lemon Chicken Soup aka Avgolemono image

Steps:

  • In a large stockpot, bring the chicken stock to a boil. Add the chicken breasts and then lower to a simmer. Simmer until the chicken is just cooked through and the internal temperature registers 160 degrees F, 15 to 20 minutes; remove to a bowl. Once cooled, shred the chicken and reserve.
  • Add the orzo or rice to the pot with the chicken stock and cook until al dente, 5 to 8 minutes.
  • In a large bowl, whisk the egg whites to soft peaks. In a medium bowl, whisk together the egg yolks and most of the lemon juice, reserving some to add later as needed. Fold the egg yolk mixture into the egg whites. Once combined, ladle in some hot stock to temper the egg mixture, whisking constantly and adding the hot liquid slowly. Very slowly, add the warm whipped egg/lemon mixture into the pot, whisking constantly to prevent any curds or clumps from forming. Continue to cook over medium-low to medium heat, whisking, until the soup thickens, about 10 minutes more.
  • Add the shredded chicken and any reserved juices to the soup. Add the lemon zest and season with salt and plenty of freshly cracked black pepper. Taste and add additional lemon juice if needed. Garnish with chopped parsley.

4 quarts low-sodium chicken stock
4 boneless, skinless chicken breasts
1 cup orzo or rice
3 large eggs, separated
1 tablespoon lemon zest plus 1/2 to 1 cup fresh lemon juice
Kosher salt and freshly cracked black pepper
Chopped fresh parsley, for garnish

Chicken Magiritsa (Chicken and Lemon Soup) image

Steps:

  • Bring stock to a boil. Season chicken inside and out with salt and pepper and add to the pot. Wrap the bay leaves, parsley and dill stems, garlic and peppercorns in a square of cheesecloth and add to the pot. Return to a boil, adjust heat and simmer, uncovered, until chicken is cooked through, about 45 minutes.
  • Remove chicken and let cool. Discard skin and bones and cut meat into bite-size pieces. Set aside.
  • Strain broth into a pot, discard sachet and set aside 1 cup broth to make the avgolemono. Bring soup to a boil and add chicken. Reduce heat to low.
  • Place 3/4 cup avgolemono in a stainless-steel bowl and slowly whisk in a ladle of hot chicken stock from the pot. When well combined, whisk in a second ladle of hot stock. Slowly whisk this mixture into the soup. Stir in chopped dill. Do not allow soup to boil again. Season to taste with salt.
  • To serve, ladle soup into warm bowls and sprinkle with shredded lettuce and scallions.

1 chicken (3 1/2 pounds)

2 bay leaves
Stems from half a bunch parsley
Stems from 1 bunch dill
1 head garlic, sliced in half
10 whole peppercorns
3/4 cup avgolemono (see recipe)
1/4 cup or more chopped dill leaves
1 1/4 cups shredded romaine lettuce
1 cup thinly sliced scallions, white and green parts

  • In a small saucepan, saute onion in oil and butter until tender. Add chicken; cook and stir until chicken is lightly browned and meat is no longer pink. Add garlic; cook 1 minute longer., Stir in the broth, carrot, peas and basil. Bring to a boil. Reduce heat; cover and simmer for 5 minutes. Add the noodles. Cover and simmer until noodles are tender, 8-10 minutes. Stir in lemon juice.

Steps:

  • Heat the oil in a large saucepan over a medium heat. Add the leeks and celery, and fry for 8-10 mins until softened. Stir in the chicken stock and bring to the boil, add the rice and chicken, turn down the heat to medium and simmer for 15-20 mins until the rice is cooked through, stirring occasionally.
  • Take off the heat and leave to cool slightly for 10-15 mins (so the eggs don't scramble), and rapidly whisk in the eggs and lemon juice until the mixture looks creamy. Serve in bowls and top with dill, if you like.

Roast Lemon Chicken and Rice Soup image

Steps:

  • Bring rice, water, lemon zest, and 1/4 teaspoon salt to a boil in a medium saucepan. Stir once, reduce heat to low, and cover. Simmer until rice is cooked and water evaporates, about 15 minutes. Remove from heat, and let stand, covered, 5 minutes. Fluff rice with a fork.
  • Bring stock to a simmer in a large saucepan over medium-high heat. Stir in rice, chicken, lemons, shallots, and pan juices, and simmer 1 minute. Remove from heat, and season with salt and pepper.
  • Divide soup among 4 to 6 bowls, and season with lemon juice and dill.
