- Preheat oven to 400°. Line a baking sheet with foil; grease foil., In a shallow bowl, mix the first 7 ingredients. Cut chicken into 1-1/2-in. pieces. Dip in melted butter, then in cracker mixture, patting firmly to adhere. Place on prepared pan., Bake 20-25 minutes or until golden brown and chicken is no longer pink. If desired, serve with sauce.

THE BEST PARMESAN CHICKEN BAKE
This chicken Parmesan is done casserole style (so, no breading or frying!), but still offers up that irresistible combination of tender chicken, crunchy/cheesy coating, and flavorful sauce.

- Preheat oven to 350 degrees F (175 degrees C).
- Coat the bottom of a 9x13 inch casserole dish with olive oil, and sprinkle with garlic and hot red pepper flakes.
- Arrange the chicken breasts in bottom of the dish, and pour marinara sauce over chicken. Sprinkle basil over marinara sauce, and top with half the mozzarella cheese, followed by half the Parmesan cheese. Sprinkle on the croutons, then top with the remaining mozzarella cheese and remaining Parmesan cheese.
- Bake in preheated oven until cheese and croutons are golden brown and the chicken is no longer pink inside, about 35 minutes to an hour, depending on the shape and thickness of your chicken breasts. An instant-read thermometer inserted into the thickest part of a chicken breast should read at least 160 degrees F (70 degrees C).

- Preheat oven to 425°F (215°C).
- In a medium bowl, combine the panko, parmesan cheese, basil, garlic powder, oregano, salt, and pepper.
- Beat the 2 eggs in a shallow dish. Dredge the chicken in the egg wash, then coat with the bread crumb mixture.
- Transfer the breaded chicken breasts to a greased roasting pan. Top the chicken with 2 small slices of mozzarella.
- Bake for 20-25 min, until the cheese and bread crumbs have turned golden brown and the chicken is cooked through, or until it has reached an internal temperature of 165°F (73°C).
- Serve with whole wheat spaghetti, marinara sauce, and a sprinkle of fresh basil.

CHICKEN PARMESAN BITE-BAKE
Okay it sounds silly, right? I find it hard to fry the chicken breasts because they're different thicknesses from one end to the other. I just cut them into bite sized cubes and continue on with the recipe. My mom likes it with pasta under it, but I really just like it with a nice salad and some cheesey bread. Add as much or as little as you like; this is just a basic, tasty recipe. Enjoy. :o)

- Preheat oven to 375 degrees. Cut chicken into cubes. Lay out flour, egg wash, and bread crumbs in an assembly line. Season bread crumbs with some Oregano, salt, and pepper. Coat chicken cubes in flour, egg, and bread crumbs respectfully. Coat the bottom of your pan in olive oil and fry until done.
- Saute onion and garlic in the tablespoons of olive oil and butter in a medium sauce pan. Add the jar of sauce. Heat until simmering. Add the can of tomatoes, perhaps some canned or jarred mushrooms, and the oregano. Salt and pepper to taste. Heat through.
- In a cake pan or ramekins or whatever oven safe dish you have handy, layer the chicken, sauce, and cheeses until evenly covered and distributed. Cook in the oven until the cheese is melted and the sauce has thickened (about thirty minutes).
- Enjoy. Serve with pasta, a salad, cottage cheese, or steamed veggies. :).
QUICK BAKED CHICKEN PARMESAN
In this lighter version of chicken Parmesan I skip the pan-frying in oil and instead bake lightly-breaded chicken breasts in the oven, then top with sauce and cheese. My family's not big on lots of sauce and cheese, so I just use a little to flavor the dish. Feel free to add more if you like, but it's excellent as-is. Serve chicken over pasta with additional sauce.

- Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
- Whisk water and egg together in a bowl until smooth. Combine bread crumbs, 2 tablespoons Parmesan cheese, oregano, basil, thyme, and garlic powder in a separate bowl.
- Dip each chicken breast in egg mixture, allowing excess egg to drip back into bowl. Coat each chicken breast in bread crumb mixture, shaking off excess. Repeat dipping each coated chicken breast in the egg mixture and the bread crumb mixture for a double-coating and place in the prepared baking dish. Spray breaded chicken breasts with cooking spray.
- Bake in the preheated oven for 40 minutes. Pour spaghetti sauce over each chicken breast and top each with mozzarella cheese and remaining Parmesan cheese. Continue baking until chicken is no longer pink in the center and the cheeses are melted, about 15 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

- In the prepared baking dish (or in a separate large bowl), stir together uncooked pasta, marinara sauce, water, salt and raw chicken. Cover tightly with aluminum foil. You want to make sure that your dish is covered tightly so that none of the moisture escapes (the pasta needs to absorb the liquid as it cooks). Bake the covered dish for 30 minutes.
- Uncover and give the pasta a good stir. At this point the pasta will still be firm and there will still be quite a bit of liquid in the dish. That's fine!
