CHICKEN WITH BASIL AND LIME
The lime-and-soy-marinated chicken is delicious added to the coconut-curry soup, but it can also be served on its own. (Double the recipe if you want each person to have a full serving of chicken.)

Steps:
- Stir together 1 tablespoon lime juice, oil, soy sauce, sugar, shallot, and 3/4 teaspoon salt in an 8-inch square baking dish. Add chicken; toss to coat. Refrigerate for at least 30 minutes.
- Heat broiler. Arrange chicken on top of shallot in dish. Broil 8 inches from heat source until lightly browned, about 7 minutes. Flip chicken, arranging shallots around sides. Broil until chicken is cooked through, 6 to 7 minutes more. Let stand for 5 minutes. Slice chicken crosswise. Reserve pan juices.
- Transfer chicken and reserved pan juices to a bowl. Toss with basil and remaining tablespoon lime juice.

- Place chicken breasts on a cutting board. Flatten slightly using the smooth side of a meat mallet. Dust both sides lightly with flour.
- Melt butter in a large skillet over medium-high heat until bubbling. Saute chicken breasts until lightly browned, about 3 minutes per side. Add chicken stock, lemon juice, basil, and lemon zest. Cover and simmer until chicken is no longer pink in the center, about 10 minutes.
- Transfer chicken to a warm platter. Cover loosely to keep warm. Boil remaining liquid over high heat, uncovered, until reduced to 1/2 cup. Spoon sauce over chicken.

- Sprinkle chicken with salt and pepper. In a large skillet, heat butter and oil over medium heat. Brown chicken on both sides. Fresh basil is the most wonderful addition to this dish, in a pinch use dried but when fresh basil is in a bundance this is a great way to serve chicken. if you like you could actually grill or roast the chicken instead of cooking on the stove top. depending on the weather outside this recipe fits all seasons because of the fact you can use different methods for cooking the chicken. you could use boneless breasts if in a pinch for time!

- in large frying pan heat oil over medium high heat. brown chicken all over.
- remove chicken and set aside.
- add onion to the pan and saute until tender about 3-5 minutes.
- add basil wine, lime juice, salt and pepper. bring to a boil then reduce heat. return chicken bone up to the pan coat with sauce and simmer covered for 20 minutes. remove chicken to platter.
- in small bowl whisk cream and flour until smooth. add to the pan drippings and bring to a boil stirring constantly.
- once thick and smooth whisk in the egg yolks. reduce the heat and let simmer 2 minutes.
- spoon sauce over chicken on the platter and garinsh with lime slices and basil leaves.

- Coat chicken breasts with egg, and dip in bread crumbs. Place on a wire rack, and allow to dry for about 10 minutes.

- Place each chicken breast half between 2 sheets of heavy duty plastic wrap and pound to 1/4 inch thickness using a meat mallet or small heavy skillet.
- Sprinkle with salt and pepper.
- Heat oil in a large nonstick skillet coated with cooking spray over medium-high heat.
- Add chicken ; cook 4 minutes on each side or until browned.
- Remove from pan ; keep warm.
- Add chicken broth, sugar , 2 tablespoons juice, and mustard to pan ; cook over medium heat, scraping pan to loosen browned bits.
- Combine water and cornstarch in a small bowl. Add cornstarch mixture to pan ; stir well with whisk. Bring to a boil over medium-high heat ; cook 1 minute or until sauce thickens slightly.
- Whisk in remaining 1 tablespoon lime juice and butter, stirring until butter melts.
- Return chicken to pan ; simmer w minutes or until chicken is thoroughly heated.

- 1. Press 1 teaspoon of the ground black pepper and the sea salt into the chicken breasts and place in a zip-top bag.
- 2. In a small bowl, stir together the chopped basil olive oil, coconut oil, lime juice, agave and minced garlic. Pour 3/4 of the mixture into the bag with the chicken, seal and let marinate for about 30 minutes. Divide the remaining marinade into two portions, one to use for basting and one to pour over dish after it's cooked.
- 3. Preheat a grill or grill pan to medium-high heat. Cook the chicken for 7-10 minutes on each side, basting frequently with the marinade mixture.
- 4. Serve chicken with remaining lime-basil marinade drizzled over the top. Garnish with fresh basil springs, if desired, and serve.
