CHINESE-STYLE BRAISED BEEF ONE-POT
Great for casual entertaining, when you fancy a warming beef stew but with some more vibrant flavours

Steps:
- Heat 2 tbsp of the oil in a large, shallow casserole. Fry the garlic, ginger, onions and chilli for 3 mins until soft and fragrant. Tip onto a plate. Toss the beef in the flour, add 1 tbsp more oil to the pan, then brown the meat in batches, adding the final tbsp oil if you need to. It should take about 5 mins to brown each batch properly.
- Add the five-spice and star anise (if using) to the pan, tip in the gingery mix, then fry for 1 min until the spices are fragrant. Add the sugar, then the beef and stir until combined. Keep the heat high, then splash in the wine or sherry, scraping up any meaty bits. Heat oven to 150C/fan 130C/gas 2.
- Pour in the soy and stock (it won't cover the meat completely), bring to a simmer, then tightly cover, transfer to the oven and cook for 1½-2 hrs, stirring the meat halfway through. The meat should be very soft, and any sinewy bits should have melted away. Season with more soy. This can now be chilled and frozen for up to 1 month.
- Nestle the cooked bok choi into the pan, then bring to the table with the basmati rice straight away and tuck in.

CHOW MEIN NOODLE CASSEROLE
This is a very tasty dish that even my kids love! It can easily be cut in half. It uses soy sauce and chow mein noodles to give it an Asian flair.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large skillet over medium high heat, saute the ground beef for 5 minutes. Add the onion and celery and saute for 5 more minutes.
- In a separate medium bowl, combine the almonds, rice, soup, water and soy sauce. Mix together well and add to the beef mixture. Place this into a lightly greased 9x13 inch baking dish. Top with chow mein noodles.
- Bake at 350 degrees F (175 degrees C) for 20 minutes.

A form of this recipe has been in my family since I was a young girl and has always been a favorite. Since I have been making it, I have tweaked it some for my family's taste. It is very filling and a wonderful spin on a Chinese meal.

- 1. Preheat oven to 375 degrees. Grease a 9 x 13 casserole dish
- 2. Brown ground beef, onion, and celery together. Drain well
- 3. Put Instant Rice in the bottom of the prepared dish. Add Soup, Water, Mushrooms, Water Chestnuts, Bean Sprouts, and Soy Sauce. Stir to combine well.
- 4. Add browned meat, onions and celery to rice mixture. Stir in well. Cover with aluminum foil and bake 45 minutes. Remove foil and top with Chow Mein Noodles. Bake for an extra 15 minutes.
KITTY'S CHINESE CASSEROLE

- 1. In a large skillet brown ground beef and onion and drain off access grease if necessary. Lean ground beef will not have grease.
- 2. In a large mixing bowl combine ground beef and all other ingredients except chow mein noodles.
- 3. Pour mixture into large casserole dish or oblong baking bakeware sprayed with non-stick cooking spray. Cover with foil.
- 4. Bake for 50 min at 350 degrees.
- 5. Remove from oven and top with chow mein noodles.
- 6. Return to oven for additional 10 minutes or until noodles are warm and slightly browned. Variations on this recipe would include using brown rice rather than white and instead of ground beef substitute chicken.
CHINESE HAMBURGER CASSEROLE

- 2. In large casserole dish, mix together the soups, onions, celery and soy sauce and mushrooms

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.
- Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.

- Preheat oven to 400°F.
- Tips - celery can be cooked by boiling a pot of water and cooking it that way for about 5 minutes, on a rolling boil. It's also good sometimes to cook the onion with the ground beef when you are browning the beef - really brings out the flavour.
- Take all of the ingredients and mix well together in a casserole dish.
- Put in oven, cook for 20-35 minutes, or until bubbly.
- Serve with a little soy sauce and enjoy!

- In a small saucepan, melt butter over medium low heat. Stir in flour a little at a time until smooth and then remove pan from heat. Stir in salt and pepper.
- Using a whisk, add broth, milk, a little at a time, stirring to keep mixture smooth then return to heat and bring sauce to a gentle boil; stir constantly until sauce thickens.
- In a large skillet, cook the beef, onion and celery over medium heat until meat is no longer pink; drain and return to skillet.
- Add the roux mixture you made in the small saucepan to the beef mixture along with the bean sprouts and soy sauce; bring to a boil.

I hadn't had this forever and my mother made it tonight. It was missing something. It's supposed to be a Chow Mein style casserole. So I added in a few things (carrots, bamboo, and mushrooms). Sprinkle green onions over the top before serving!
