CHINESE TOFU SALAD

This is one of my favorites for lunch. It's packed with protein and tastes light and fresh. Any extra soy ginger dressing can be used as a marinade or sauce for just about anything. Chicken can also be substituted for the tofu for a more traditional Chinese Chicken Salad. Yum!

Chinese Tofu Salad image

Steps:

  • Chop tofu into desired sized pieces and marinate in soy ginger marinade overnight (or as long as possible).
  • Drain tofu (keeping left-over marinade) and bake on a cookie sheet lined with parchment paper for 10 to 15 minutes or until golden brown.
  • Allow tofu to cool and prepare other salad ingredients.
  • Combine all ingredients and top with cashews, cilantro and sesame seeds.

1 head green cabbage, shredded
1/2 head red cabbage, shredded
1 cup shredded carrot
1/2 cup tamari cashews
chopped fresh cilantro (garnish) (optional)
black sesame seed (garnish) (optional)
1 (16 ounce) package extra firm tofu
2 cups soy sauce
2 cups rice vinegar
1 1/2 cups canola oil
1/4 cup minced garlic
1/4 cup minced ginger
1 cup brown sugar
1/4 cup sesame oil

SICHUAN CELERY AND TOFU SALAD

This otherwise simple salad, adapted from a dish at Szechuan Gourmet in Manhattan, may require a trip to a Chinese market for Szechuan peppercorns and pressed tofu. And you'll need to make your own chili oil! But here's the thing. The effort, which really isn't much more than difficult shopping, produces an elegant dish that is worth whatever shoe leather or mileage you'll expend getting the ingredients together. It is astonishingly good. And we'll even allow one substitution. You can use regular celery instead of the Chinese version!

Sichuan Celery and Tofu Salad image

Steps:

  • Heat oil in a small saucepan over medium-high heat; when it simmers, add ginger, cinnamon, cloves, coriander, cumin, star anise, Sichuan peppercorns and chili flakes. Remove from heat and let sit until cool, at least 1 hour and preferably 2 or 3. Strain oil into a bowl or jar and discard spices.
  • Put a pot of salted water over high heat and bring to a boil. Add celery and blanch for about a minute; drain in colander and run under cold water to stop the cooking process.
  • Layer celery and tofu on serving plates, drizzle with chili oil and sprinkle with salt.

  • Bring a small pot of water to a boil. Add the sliced tofu and stir for a few seconds. Rinse the sliced tofu with tap water, drain thoroughly, and set aside to cool.
  • Add sesame oil and garlic into a small bowl. Heat in microwave for 30 seconds, or cook until the oil just starts to bubble and the garlic turns tender.(*Footnote 1)
  • Right before serving, add sliced tofu, carrot and bell peppers into a big bowl. Add the sesame oil and garlic, green onion, rice vinegar, salt, and chili oil (if using). Toss to mix well.

  • To make the tofu, preheat the oven to 350°F (175°C, or gas mark 4). Line a half sheet pan with parchment paper.
  • Add the oil, tamari, garlic powder and ginger to a medium mixing bowl. Whisk together and season with a little salt and pepper. Add the tofu to the bowl and toss to coat the tofu well. Arrange the tofu in a single layer on the sheet pan and bake for 30 minutes.
  • At the halfway mark for the tofu, toast the almonds. Line a quarter sheet pan with parchment paper. Arrange the almonds in a single layer. Bake for 10 to 15 minutes, until the almonds have turned a few shades darker. Cool and coarsely chop.
  • In the meantime, to make the vinaigrette, add the garlic and ginger to a glass jar with a lid or to a dressing bottle. Cover with the vinegar and Mandarin orange juice, and let sit for 15 minutes to macerate. Add the oil, tamari, mirin and maple syrup. Cover the container and shake well to combine. The dressing will separate, so shake well before using.
