CHOCOCONUT CHIP COOKIES

I came up with this scrumptious recipe one day, just trying to find a way to use the bag of coconut flakes sitting in the cupboard. It was just a cross between family recipes for cookies and my own special touch of imagination. Well I'm glad that I came up with it as are my family and friends. I hope you enjoy as much as we did.

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • In a large bowl, cream together the butter, brown sugar and white sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, baking soda and salt; stir into the creamed mixture. Fold in chocolate chips and coconut. Drop by rounded spoonfuls onto cookie sheets.
  • Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, stir together the cake mix and baking powder. Add eggs and oil, then mix until well blended.
  • Stir in chocolate chips, or your choice of additions. Drop by rounded spoonfuls onto cookie sheets.
  • Bake for 10 minutes in the preheated oven. Allow cookies to cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.

I concocted this recipe to make for Teacher Appreciation Week at our local school. Of course I had to make a little side cupcake for me to try. :-) It is so moist and decadent. Sweet coconut flavor with rich chocolate goodness. I hope the teachers like it.

CHOCOLATE CHIP COCONUT CAKE image

Steps:

  • 1. for the cake: Preheat oven to 350 degrees. Grease a 9x13 inch baking pan. In a large mixing bowl, combine cake mix, eggs, both measurements of coconut milk, cooking oil, and water. Mix on medium speed for about 2 minutes. Stir in the sweetened coconut.
  • 2. Pour into greased pan. Sprinkle the chocolate chips evenly on top of batter. Do not stir in!
  • 3. Bake at 350 degrees for 35 to 40 minutes. Make topping while cake is baking (instructions below).
  • 4. for the topping: In a medium sauce pan, melt the butter on a low heat. As soon as melted, add the coconut milk and coconut. Cook for 2 minutes. Stir constantly and do not let it boil. Set off heat to cool.
  • 5. Spread the topping on as soon as cake is removed from oven.

FOR THE CAKE:
1 pkg yellow cake mix (18.25 ounce size)
3 large eggs, beaten
3/4 c coconut milk
2 Tbsp coconut milk
1/3 c cooking oil
1/4 c water
1 c sweetened flaked coconut
1 1/4 c semi sweet chocolate chips
FOR THE TOPPING:
1 stick butter
2/3 c coconut milk
1 1/2 c sweetened flaked coconut

  • Heat oven to 350°F (325°F for dark or nonstick pans). In large bowl, beat cake mix, butter, 1 tablespoon milk, vanilla and egg with electric mixer on medium speed until smooth, or mix with spoon. Mix in additional 1 tablespoon milk if dough is too dry. Stir in nuts and chocolate chips.
  • Drop dough by slightly less than tablespoonfuls 2 inches apart on ungreased cookie sheets.

Steps:

  • Add the flour, baking powder, baking soda and salt to a large bowl and whisk to combine. Set aside.
  • Add the coconut sugar and butter to the bowl of a stand mixer fitted with the paddle attachment. Beat together until light and fluffy, scraping down the sides of the bowl as necessary, about 2 minutes. Add the eggs, one at a time, being sure to fully incorporate before another addition. Once incorporated, add the vanilla and beat to combine. Add in the flour mixture and beat until no more flour spots are visible. Fold in the chocolate chips and coconut by hand. Cover the bowl and refrigerate for at least 2 hours or up to overnight.
  • Preheat the oven to 350 degrees F. Line 2 rimmed baking sheets with parchment paper.
  • Scoop out a 2-tablespoon size portion of dough and roll it into a ball. Place the dough ball on the prepared baking sheet. Continue scooping and rolling until you have about 10 to 12 cookies per sheet, leaving 2-inches between them. Bake until the edges have set, but the center is still soft, about 14 minutes.
  • Allow the cookies to cool on the baking sheet for 10 minutes before transferring them to a wire rack to cool completely. Let the baking sheets cool completely and bake the remaining dough. (Alternatively, the remaining cookie dough can be wrapped and frozen for up to 1 month.)
