CHOCOLATE CHARMS
The dusting of cocoa on these little cookies, much like that on a chocolate truffle, may seem to promise a similar velvety interior, but the illusion is fleeting. One bite reveals the unmistakable crumbly texture of shortbread.

Steps:
- Preheat oven to 325 degrees. Line 2 baking sheets with parchment paper. Sift together flour, cocoa, and salt into a bowl. Set aside.
- Place butter in the bowl of an electric mixer fitted with the paddle attachment. Beat on medium speed until fluffy, about 5 minutes. Add sugar, and beat about 2 minutes more, until very light in color and fluffy, occasionally scraping down the sides of the bowl with a spatula. Add vanilla, if using. Add flour mixture, and combine on low speed, scraping with spatula if necessary, until flour is just incorporated and dough sticks together when squeezed with fingers.
- Form dough into a flattened disk; wrap in plastic. Chill until firm, at least 1 hour.
- Using a spoon, form dough into 1-inch balls; place on prepared baking sheet. Bake until firm, 20 to 25 minutes, rotating halfway through. Cool completely on wire rack. Dust with cocoa powder just before serving.

- Use non-stick cooking spray or butter to coat a 9 x 13 baking pan (or 7 1/2 x 11 3/4 for thicker bars).
- Melt the butter in a large pot over medium-low heat. Add in marshmallows and stir until completely melted.
- Drop the heat to low. Pour in the cereal and combine until all of the cereal is coated with the marshmallow mixture.

- Using a double boiler or a microwave, melt the white chocolate. If using microwave, stop and stir the chocolate every 20 seconds to help avoid seizing. Set aside.
- Pour melted white chocolate on the lined baking sheet and spread out into a large rectangle. **If adding food coloring, make sure you reserve 1/4 of the melted white chocolate for the pink swirls. Stir 1 drop of red or pink food coloring into reserved white chocolate. Drizzle on top of white chocolate in lines. Use a toothpick to swirl.**

- Melt the butter in a large saucepan over low heat. Add the marshmallows until they are just about fully melted into the butter. Some chunks of marshmallow may remain. Add in the Lucky Charms cereal and stir until the cereal is fully coated.
- Pour mixture into prepared baking pan and gently spread out evenly. I sprayed the back of a large spatula with non-stick spray and gently pressed the mixture without packing it down. Allow to set for 2 hours at room temperature before cutting into rectangles or squares, whichever shape/size you prefer.
- Line a large baking sheet with parchment paper or a silicone baking mat. Set aside. Melt the white chocolate according to package instructions. Hold the treat and dip the bottom into white chocolate, making sure to coat it generously. Place treats white chocolate side up on prepared baking sheet. Allow chocolate to set at room temperature for about 10 minutes. Store treats at room temperature for up to 1 week.
