CHOCOLATE COVERED CHERRY COFFEE
Annacia at food.com, inspired me to make this coffee, but I slightly tweaked the recipe to suit my taste. The name of the coffee describes it best!

Steps:
- 1. In a coffee cup, heat water and coffee in the microwave until hot. I heated mine for 1 minute & 15 seconds, in a 1,000 watt microwave oven. (Or heat the water and coffee on top of the stove in a small saucepan.) Add the sugar, and stir.
- 2. Now add the chocolate covered cherry, stir well to dissolve. After the chocolate has dissolved, remove the cherry from the cup.
- 3. Top the coffee with desired amount of Reddi Wip, or Cool Whip. Place the cherry ontop the whipped topping, and serve.
- 4. *Note: Now a days when making this coffee, I use Sanka Naturally Decaffeinated Coffee. But if using ground coffee, use 2 teaspoons per each 2/3's cup of water in your coffee maker. Also, I have found that not all of the chocolate from the chocolate covered cherry, dissolves completely in the hot coffee. You may still see bits of chocolate floating in your cup.

- In a small bowl, combine the sugar, butter, milk and extract. Knead until smooth and pliable. Shape into 1-in. balls and flatten each into a 2-in. circle. , Wrap one circle around each cherry and lightly roll in hands. Place with stems up on waxed paper-lined baking sheet. Cover loosely and refrigerate 4 hours or overnight. , In a microwave, melt chocolate and shortening; stir until smooth. Holding on to the stems, dip cherries into chocolate; allow excess to drip off. Place on waxed paper until set. Store in a covered container. Refrigerate 1-2 weeks before serving.

CHOCOLATE COVERED CHERRY COFFEE
My hubby loves Chocolate Covered Cherries. I bought a box yesterday and when I got up this morning there was a single one left in the box. I just know that in his self sacrificing way he was just protecting me from the evil sugar (Yeah, right! lol). Anyway, I had coffee making and when it was done I just popped that morsel into my coffee cup without really thinking about it. Well, YUM!

- stir gently and add the Splenda or sugar.

CHOCOLATE-COVERED COFFEE BEANS
After some experimenting, I've finally found a way to reproduce the delicious chocolate-covered coffee beans that you often see in coffee shops. This recipes uses 2 two ingredients: coffee beans and chocolate.

- Place 1/2 of the chocolate in a microwave-safe bowl. Microwave on low until almost melted, about 1 minute; do not allow chocolate to burn. Remove from the microwave, stir to melt any remaining pieces, and let cool slightly.
- Drop a small handful of coffee beans into the chocolate and drench until completely covered. Fish out with a fork and drop onto waxed paper, making sure beans are separated. Repeat with remaining beans. Let cool until chocolate is solid, about 30 minutes.
- Meanwhile, melt remaining chocolate in the microwave; do not allow to burn. Stir once and cool slightly, about 2 minutes. Drop a small amount of chocolate-covered coffee beans into the melted chocolate at a time, until completely covered with a second coating. Place on a new sheet of waxed paper and let cool completely, about 30 minutes.

CHOCOLATE COVERED CHERRY COFFEE (DIABETIC-OR NOT)
A flavored coffee using sugar-free flavored syrups. I use Torani's. You could make this with the regular sugar added syrups if you are not diabetic. For the steamed milk, I use a microwave frother, and pour some of the hot milk in the coffee and then froth some to top it with. Also good using cold coffee and milk served over ice.

- Preheat oven to 375°. In a large bowl, beat butter and sugar until blended. Gradually beat in cherry juice and vanilla. In another bowl, whisk flour and cocoa; gradually beat into creamed mixture. Stir in coconut, cherries and chocolate chips., Shape dough into 48 balls (about 1-1/4 in.); place 2 in. apart on ungreased baking sheets. Press a deep indentation in center of each with the end of a wooden spoon handle. Bake 9-11 minutes or until set and bottoms are lightly browned. Remove from pans to wire racks to cool completely., Fill each cookie with 3/4 teaspoon frosting. Top with cherries. In a microwave, melt chocolate chips and shortening; stir until smooth.
