Steps:

  • In a saucepan, combine water, sugar and canola (or rapeseed) oil. Bring to a boil then remove from heat.
  • Add the flour and stir vigorously until mixture forms a smooth paste. (Make sure you beat out all bubbles.)
  • Add the eggs and stir until mixture becomes smooth.
  • Spoon the dough into a piping bag with a star-shaped tip.
  • NOTE: Really push the mixture down in the bag to eliminate air bubbles!
  • Pipe strips onto a baking sheet lined with parchment paper.
  • Place in freezer for 45 minutes.
  • Heat oil in a large pot to 350˚F (180˚C).
  • Fry the churros until golden brown, then drain on paper towels.
  • Using a straw, poke a hole through each churro to create room for the filling.
  • Immediately sprinkle with a bit of cinnamon and sugar.
  • Spoon chocolate hazelnut spread into a piping bag.
  • Pipe filling into churros.
  • Enjoy!

Homemade Churros with Cardamom and Chocolate image

Steps:

  • Bring water to a boil in a medium-sized pot. Add vegetable oil, sugar, and salt. Stir to combine. Add flour and turn off heat. Stir continuously and vigorously with a wooden spoon until dough balls up and follows your spoon around the pan, 1 to 2 minutes. Set aside to cool when dough feels firm and supple.
  • Heat 3/4- to 1 inch of grapeseed oil in a medium-sized pot over medium heat.
  • While oil heats, combine heavy cream, dark chocolate, chocolate-hazelnut spread, butter, sugar, and ground coffee in a pan set over lowest heat. Stir often to ensure even melting, 3 to 5 minutes.
  • Grease the inside of a piping bag fitted with a star tip. Insert dough and squeeze it all the way to the bottom of the bag.
  • Insert the handle of a wooden spoon into the oil heating in the pot; if it bubbles steadily, the oil is ready. Carefully squeeze dough out of the bag directly into the hot oil, cutting it off at 6-inch lengths. You can also pipe lengths of dough onto parchment paper and transfer them to the oil by hand. Do not crowd the pot.
  • Fry churros, turning every minute, for 2 to 3 minutes total. Transfer fried churros to a dish lined with paper towels.
  • Place cardamom seeds, cinnamon stick, and star anise in a spice grinder and blend to a fine powder. Transfer to a wide dish and add sugar. Mix well to combine.

  • In a saucepan over medium-high heat, add butter, brown sugar, salt, and water, and bring to a boil.
  • As soon as the butter has fully melted and the mixture begins to boil, reduce the heat to medium-low and add in flour.
  • Using a wooden spoon, stir until the dough comes together to form a ball and there are no lumps.
  • Remove from heat and let cool for 5 minutes before proceeding to the next step (to prevent accidentally cooking the eggs).

  • Slice the brioche into 1 1/2-inch-thick slices (6 to 8 slices). Lay each slice on its side and cut a 2-inch slit into the bottom of each. Fill the slit with about 1 tablespoon of the chocolate-hazelnut spread.
  • Whisk together the milk, vanilla, salt and eggs in a shallow bowl or baking dish. Place the crushed cereal in another baking dish. Dip a slice of the filled brioche into the egg mixture on both sides a few times, making sure the mixture has soaked in, then transfer to the cereal dish and coat with cereal on both sides. Place the bread on a cutting board or plate while finishing dredging the rest. Repeat with the remaining slices, egg mix and cereal.
  • Heat a large, nonstick skillet over medium heat with 2 tablespoons of the butter. Place as many slices as will fit in the skillet. Cook on one side until the coating is crisp and golden brown, 2 to 3 minutes, then flip and cook another 2 to 3 minutes on the other side. Transfer to a platter. Add 2 more tablespoons of butter to the skillet and then more slices. Repeat the process with the remaining butter and slices, reserving 2 tablespoons of butter for the bananas.

Steps:

  • Special equipment: Piping bag fitted with a large star decorating tip
  • Make the dough by heating water, sugar and salt in saucepan over medium heat until hot. Add the flour all at once and stir vigorously for 1 minute on the heat to dry the mixture out. Remove from heat and transfer the dough to a stand mixer bowl; mix on low speed until there is no longer steam escaping from the dough. With the mixer running on medium, add the eggs, 1 at a time, incorporating completely until a shiny, smooth texture forms before adding the next egg, and then the egg yolk. Scrape down the mixer bowl with a rubber spatula between each addition. Transfer the dough to the piping bag.
  • Pour oil into a large heavy bottomed pot to a depth of 4 inches; heat over medium-high heat to 375 degrees F.
  • To fry the churros, carefully squeeze the dough from the piping bag directly over the oil in 3 to 4-inch lengths, cutting the dough at the tip with a butter knife and gently dropping them into the oil. Turn frequently with a Chinese strainer or tongs until golden brown, about 3 minutes. Work in batches to prevent overcrowding the pan and allowing the oil to reheat to 375 degrees F between each batch. Drain the churros on a paper towels and then toss in sugar to coat while still warm.
  • Melt the chocolate in a glass bowl set over a pan of barely simmering water. Arrange the curros on a serving platter and serve the chocolate sauce alongside. Enjoy!
  • Cook's Note: Self-rising flour makes the churros a bit lighter and fluffier, but all-purpose flour works just fine. Pick your favorite flavored chocolate; I love the flavor of orange and chocolate or even bacon chocolate with these churros!

San Diablo Artisan Churros image

Steps:

  • Making the Dough.
  • Add water and butter into a saucepan and bring to a boil, make sure butter is completely melted.
  • Add flour and salt into the saucepan with water/butter, leave on heat, and mix vigorously until no clumps of flour remain and dough resembles a ball. Take off heat.
  • Place hot dough in your standard mixer bowl, mix with paddle attachment on low and allow steam to escape and dough.
  • While dough is letting off steam, mix together egg and vanilla in a separate bowl.
  • Add egg mixture to dough & speed up mixer.
  • If dough is sticking to sides of mixer too much: stop mixer, scrape down the sides and paddle, repeat until dough is smooth and playdough-like consistency.
  • Place dough in the fridge to cool for about 10 minutes.
  • Once dough is cooled you are ready to make some delicious churros! Place the dough in your San Diablo Churro Maker or piping bag and keep in the fridge for later.
  • Oil Set-up.
  • Pre-heat oil in fryer or pan to 375°F/190°C with approximately 2" of oil.
  • We recommend canola oil for its neutral taste. It makes the outside of the churros crispy and the inside melt in your mouth. Feel free to experiment with other oils that you may like better or fit better with your dietary preferences.
  • Frying the Churros.
  • Slowly twist the knob down on your San Diablo Churro maker to press out the churro dough through the nozzle. Or pipe the churro dough through your piping bag. After pressing the desired amount of churro dough through the nozzle, cut it off with a butter knife or your finger.
  • Place each raw churro gently into the hot oil. Please be careful! To avoid any hot oil splashes, we definitely recommend angling the Churro Maker vertically over and close (but not too close) to the surface of the hot oil.
  • Watch the churros fry in the hot oil and rotate with metal tongs as needed to get the entire churro to your ideal golden brown crispiness (usually 3-4 minutes).
  • Using metal tongs, remove your hot, fresh churro works of art from the hot oil or air fryer and cool on the plate you've prepared.
  • Sugar and Fill.
  • After your churros have cooled a bit but are still warm, dust them with your desired amount of San Diablo's signature cinnamon sugars.
  • Fill to your heart's content using a squeeze bottle or one of San Diablo's re-usable filling bottles with Dulce de Leche, Nutella or Sweet Cream.
  • Pro tip: get creative with what you have around like honeys, jams, nut butters and syrups! And for added flavor "pop," we humbly suggest sprinkling your churro with some pink Himalayan salt!
