Put a twist on meringue cookies with semi-sweet chocolate & lightly salted cocktail peanuts. These Chocolate & Peanut Meringue Cookies are super tasty!

Steps:
- Heat oven to 300°F.
- Beat egg whites and cream of tartar in large bowl with mixer on high speed 3 to 5 min. or until soft peaks form. Beat in granulated sugar, 1 Tbsp. at a time, until stiff peaks form. Mix chocolate, nuts and flour; gently stir into egg whites.
- Drop tablespoonfuls of egg white mixture, 1 inch apart, onto 2 parchment paper-covered baking sheets.
- Bake in top and bottom thirds of oven 24 to 26 min. or until light golden brown, rotating baking sheets after 12 min. Transfer to wire racks; cool completely. Place powdered sugar in strainer; shake over cookies.

- Preheat oven to 300 degrees F (150 degrees C).
- Combine egg whites, cream of tartar, and vanilla. Beat until the whites form soft peaks. Slowly add sugar; beat until stiff peaks form, and mixture becomes glossy. Fold in cocoa and chocolate chips.
- Drop mixture by teaspoonfuls on to a greased cookie sheet. Bake for 25 to 30 minutes.

- Preheat oven to 350 degrees. In a medium heatproof bowl, combine egg whites, confectioners' sugar, and pinch of salt. Set bowl over (not in) a pot of barely simmering water and cook, whisking constantly, until mixture is warm and frothy and sugar is dissolved, 1 to 2 minutes. Remove bowl from heat and, using an electric mixer, beat mixture on high until stiff, glossy peaks form, about 3 minutes. Beat in vanilla, then fold in peanuts and chocolate. Transfer mixture to a quart-size zip-top bag; with scissors, cut a 3/4-inch hole in one corner.
- Pipe 30 mounds (1 inch tall and 1 1/2 inches wide), 1 inch apart, on a parchment-lined rimmed baking sheet. Bake, using the handle of a wooden spoon to keep oven door slightly ajar, until dry to the touch, about 20 minutes, rotating halfway through. Let cool completely on sheet on a wire rack before peeling off parchment.

CHOCOLATE MERINGUES

- Preheat oven to 200 degrees F. In a large bowl with an electric mixer beat the egg whites until frothy. Add the cream of tartar and granulated sugar 1 tablespoon at a time. Beat until the egg whites are stiff and shiny and the sugar granules cannot be felt in the whites. Beat in the vanilla, reduce speed to low and add cocoa until combined. With a spatula put the egg white mixture into a pastry bag fitted with a large star tip. Pipe 2-inch meringue "kisses" on a parchment paper lined baking sheet, at least 2 inches apart. Bake in the middle of oven for 2 hours. Turn off oven and leave the meringues in it for at least 2 more hours or until meringues are completely dry.
PEANUT BUTTER-CHOCOLATE MERINGUE COOKIES

- Heat oven to 200ºF.
- Cover 2 baking sheets with parchment. Draw 24 (1-1/2-inch) circles on each parchment sheet.
- Grate 1 oz. chocolate. Beat egg whites and cream of tartar in medium bowl with mixer on high speed until soft peaks form. Add sugar, 1 Tbsp. at a time, beating constantly until stiff peaks form. Gently stir in vanilla and grated chocolate.
- Spoon egg white mixture into resealable plastic bag; cut 1/2-inch piece off one bottom corner. Use circular motion to squeeze about 1 Tbsp. egg white mixture over each circle on parchment.
- Bake 1 hour 10 min. or until meringues are dry and can easily be transferred from parchment to wire racks; cool completely. Meanwhile, melt remaining chocolate as directed on package; stir in peanut butter. Cool.
- Spread flat sides of 24 cookies with peanut butter mixture, adding about 1 tsp. to each. Cover with remaining cookies, flat sides down.

- Place egg whites in a large bowl; let stand at room temperature for 30 minutes. Beat egg whites until foamy. Add cream of tartar and salt; beat until soft peaks form. Gradually add sugar, 1 tablespoon at a time, beating on high speed until stiff peaks form, about 6 minutes. Beat in cocoa. Fold in chocolate chips and nuts if desired., Cut a small hole in the corner of a pastry or plastic bag; insert # 806 round pastry tip. Fill the bag with meringue. Pipe 1-1/2-in. hearts 2 in. apart onto lightly greased baking sheets. Bake at 300° for 20-25 minutes or until firm to the touch. Remove to wire racks to cool. Store in an airtight container.

- Preheat oven to 350°. Spread out peanuts on a rimmed baking sheet. Using a mug or a rolling pin, crush into large bits; set aside.
- Pour water into a medium saucepan to a depth of about 1" and bring to a simmer over medium. Combine egg whites, powdered sugar, and salt in the bowl of a stand mixer and set over saucepan (you want bowl to rest securely in the rim of the saucepan over, not touching, the water). Heat, whisking constantly, until whites are hot to the touch (you can check with an instant-read thermometer; it should register 120°), about 5 minutes.
- Transfer bowl to stand mixer fitted with whisk attachment and beat on high speed until soft peaks form. Add vanilla and continue to beat meringue until very thick and glossy stiff peaks form, about 5 minutes total. Using a rubber spatula, fold in half of reserved peanuts, then add remaining peanuts and work in just enough to create streaks. Immediately spoon heaping tablespoons onto a parchment-lined baking sheet into 1½" mounds, spacing about 1" apart.
- Place meringues in the oven and prop the door ajar with the handle of a wooden spoon. Bake meringues until they puff slightly, crack along the sides, and feel dry on the outside but soft to the touch, 15–20 minutes. Transfer meringues to a wire rack and let cool.
