SIMPLE CHOCOLATE CHIP COOKIES

These classic cookies are a go-to sweet treat that are easy to whip up and store well-if they last! We use two kinds of sugar: granulated for crunch and brown for chewiness.

Steps:

  • Position 2 racks in the center of the oven, and preheat to 375 degrees F. Line 2 baking sheets with parchment.
  • Whisk together the flour, baking soda and 1 teaspoon salt in a large bowl.
  • Beat the butter and both sugars on medium-high speed in the bowl of a stand mixer fitted with a paddle attachment (or in a large bowl if using a handheld mixer) until light and fluffy, about 4 minutes. Add the eggs, one at time, beating after each addition to incorporate. Beat in the vanilla. Scrape down the side of the bowl as needed. Reduce the speed to medium, add the flour mixture and beat until just incorporated. Stir in the chocolate chips.
  • Scoop 12 heaping tablespoons of dough about 2 inches apart onto each prepared baking sheet. Roll the dough into balls with slightly wet hands. Bake, rotating the cookie sheets from upper to lower racks halfway through, until golden but still soft in the center, 12 to 15 minutes (the longer the cook time, the crunchier the cookies). Let cool for a few minutes on the baking sheet, and then transfer to a rack to cool completely.
  • Let the baking sheets cool completely, scoop the remaining dough onto 1 sheet and bake. Store the cookies in a tightly sealed container at room temperature for up to 5 days.

No-Bake Chocolate Coconut Cookies image

Steps:

  • Line a baking sheet with waxed paper.
  • Mix oats and coconut in a large bowl until thoroughly combined.
  • Stir sugar, cocoa powder, milk, and margarine together in a saucepan over medium heat until the mixture is smooth. Bring to a boil and cook for 2 minutes, stirring constantly. Steps:

  • Combine margarine, sugar, milk, cocoa, and salt in a heavy pot and bring to boil over medium heat for 1 1/2 minutes.
  • Remove from hot burner.
  • Add oats, peanut butter, and vanilla.
  • Add raisins/nuts if desired.
  • Mix well.
  • Drop by teaspoon on waxed paper and let cool.

Steps:

  • Preheat the oven to 350 degrees F.
  • Combine the butter, sugar and brown sugar in a stand mixer fitted with the paddle attachment. Mix until well combined and creamy. Add the vanilla and egg. Gradually add the baking mix and mix until combined. Add the chocolate chips and pecans; mix until just combined.
  • Drop heaping tablespoons of the dough onto parchment-lined baking sheets.
  • Bake until the cookies are lightly browned, about 15 minutes, rotating the baking sheets halfway through.
  • Remove from the oven and let the cookies cool on the baking sheets for 2 minutes, then transfer to a wire rack to cool completely. Store in an airtight container.

  • Heat oven to 400°F. Grease cookie sheet with shortening or cooking spray.
  • In large bowl, beat granulated sugar, 1/2 cup butter, the buttermilk, vanilla, egg and 2 ounces melted chocolate with electric mixer on medium speed, or mix with spoon. Stir in flour, baking soda and salt.
  • On cookie sheet, drop dough by rounded tablespoonfuls about 2 inches apart.
  • Bake 8 to 10 minutes or until almost no indentation remains when touched in center. Immediately remove from cookie sheet to cooling rack. Cool completely, about 30 minutes.

Quickie Cookies (no-bakes) image

Steps:

  • 1. Mix the sugar, cocoa, butter and milk in a saucepan. Bring to a strong boil for 1 & 1/2 to 2 & 1/2 minutes NO LONGER.
  • 2. Add vanilla and peanut butter; stir quickly and thoroughly to melt peanut butter. Add oats and mix quickly...this step must be where the quickie comes from in the title of quickie cookies :-)
  • 3. Again, quickly pour mixture in a greased dish (13X9) or whatever you have. Press into pan evenly. When cooled, cut into squares.
  • 4. *Note* My mom dropped spoonfuls on wax paper, but I find it easier to put it all in a dish and let it cool. I think to have enough time to drop by spoonfuls before the mix hardens, I would only boil the mixture for 1 1/2 to 2 minutes.

  • Preheat the oven to 180C/gas 4/fan 160C.Gather together and weigh all the ingredients.
  • Chop 200g/7oz of the plain chocolate into rough, irregular chunks. Chop the milk chocolate in the same way, but keep separate.
  • Break the remaining plain chocolate into a large heatproof mixing bowl. Melt in the microwave on medium for about 11⁄2 minutes (or over a pan of simmering water).
  • Stir the chocolate until melted, then tip in the sugar, butter, peanut butter, egg and vanilla and beat with a wooden spoon until well mixed. Stir in the flour, all the milk chocolate chunks, the nuts (no need to chop) and half the plain chocolate chunks. The mixture will feel quite soft, and drop easily from the spoon if you shake it.
  • Drop big spoonfuls in 12 piles on to 2 or 3 baking sheets, leaving room for them to spread (you may need to bake in batches). Stick the remaining chunks into the cookies (2-3 pieces in each).
  • Bake for 10-12 minutes until they are tinged very slightly darker around the edges. The smell will let you know they are ready. They will be soft in the middle, but will crisp up as they cool. (Cook for longer and you'll have crisper cookies.) Let them cool and firm up for a few minutes on the baking sheet (they'll break if you move them while still hot), then lift off with a wide spatula on to a cooling rack. They will keep crisp in an airtight tin for 3-4 days.
