CHOCOLATE-COVERED STRAWBERRY PIE

This is one of my favorite pies! It would be a great addition to a holiday meal or a summer picnic.

Chocolate-Covered Strawberry Pie image

Steps:

  • Place 2 ounces chocolate and 2 tablespoons butter in a microwave-safe bowl. Melt in the microwave on 30% power for 2 1/2 minutes, stirring occasionally. Spread over the bottom and up the sides of the pie crust. Place crust in the freezer.
  • Beat cream cheese using an electric mixer until smooth. Beat in sour cream, sugar, and vanilla bean paste. Remove crust from freezer and pour in filling.
  • Combine strawberries and jam in a bowl and spread on top of the cream cheese layer.
  • Combine remaining chocolate and butter in a microwave-safe bowl. Heat in the microwave until melted, about 1 minutes. Drizzle over the pie using a spoon. Refrigerate pie for about 30 minutes before serving.

Steps:

  • 1. Soften ONE pie crust from a 15-oz. box, as directed on package. Save the other pie crust (regrigerated!) for another use. Prepare your strawberries ahead of time: clean, hull, slice into halves, and allow to drain/dry, before pouring into pie.
  • 2. Heat oven to 450°. Place pie crust in a 9" glass pie pan, or a 10" tart pan with removable bottom. Prick the pie crust to prevent swelling and bowing, or use a pie weight to prevent crust from bowing up. Bake according to pkg. instructions for ONE-CRUST pie. Cool crust completely, on a cooling rack. Make sure the pie pan is cool, too, so the heat doesn't transfer up thru the crust and get trapped by the filling once it's poured in ... your pie won't set up!
  • 3. In a 2-quart saucepan, melt the chocolate chips and butter over low heat, stirring constantly. Stir in powdered sugar, 3 tbsp. kirsch, and the cream cheese, until well blended. Pour into COOLED pie shell. Arrange your prepared strawberries (make sure they're good and dry) over the chocolate mixture.
  • 4. In a 1-quart saucepan, heat the jelly, with 2 tbsp. of kirsch until warm and well mixed, and a thinner consistency. Spoon OR brush the jelly over the strawberries, covering the entire thing. Pour any remaining glaze over the pie.
  • 5. Refrigerate at least 2 hours before serving time. Cover and refrigerate any remaining pie (yeah, right! Leftovers? I don't think so!)

1 refrigerated pie crust, softened as directed on box
FILLING
1 c (6-oz bag) semi-sweet chocolate chips
2 Tbsp butter
1/4 c powdered sugar
3 Tbsp kirsch (or water, or 7-up)
1 pkg (8-oz) cream cheese, room temperature
2 pt strawberries, hulled, cleaned, and halved (3 to 4 cups)
GLAZE
3 Tbsp red currant jelly
2 tsp kirsch (or water or 7-up)

STRAWBERRY AND CHOCOLATE PIE (NO BAKE!!) (TASTE OF HOME)

Strawberries, chocolate, and cream cheese in a pastry crust. This looks amazing when it is done but takes little to no effort. Great dessert to impress with! Only baking required is a few minutes to bake the crust, the rest of the time is chilling the pie.

  • In a large saucepan, melt 2 oz chocolate and butter over low heat, stirring constantly. Spread or brush over the bottom and up the sides of the pie crust. Chill.
  • Meanwhile, in a large mixing bowl, beat the cream cheese, sour cream,sugar and vanilla until smooth. Spread over chocolate layer; cover and chill for two hours.
  • Arrange strawberries over the filling. For great presentation, cut off the tops and place the cut end down into the cream cheese mixture and have the little ends poking up. Go around the pie in a circle until it is filled in with strawberries. Brush the strawberries with the melted jam. Then melt the remaining chocolate and drizzle it over the strawberries.

Secret Chocolate Strawberry Pie image

Steps:

  • Reserve 2 cups sliced strawberries. Mash remaining 1 cup sliced strawberries; add enough water to make 2 cups. Stir together sugar and cornstarch in medium saucepan; stir in mashed strawberries. Cook over medium heat, stirring constantly, until mixture comes to a boil; cook and stir 2 minutes. Remove from heat.
  • Add gelatin, butter and lemon juice; stir until gelatin is dissolved. Strain mixture; discard seeds,. Refrigerate until partially set.
  • Meanwhile, place chocolate chips and 3 tablespoons whipping cream in small microwave-safe bowl. Microwave at HIGH (100%) 1 minute; stir.
  • If necessary, microwave at HIGH an additional 15 seconds at a time, stirring after each heating, just until chips are melted when stirred. Spread chocolate mixture onto bottom of prepared crust; refrigerate 30 minutes or until firm.
  • Beat cream cheese and remaining 1 tablespoon whipping cream in small bowl until smooth; spread over chocolate layer. Refrigerate filled crust while gelatin mixture is cooling. When gelatin mixture is partially set, fold in reserved sliced strawberries; spoon mixture over cream cheese layer.
  • Cover; refrigerate several hours or until firm. Just before serving, garnish with sweetened whipped cream and whole strawberries, if desired. Cover; refrigerate leftover pie. 8 servings.

Strawberry Cream Pie With Chocolate Cookie Crust image

Steps:

  • Make the crust: Heat oven to 350 degrees with a rack in the middle position. Place cookies, sugar and salt in a food processor and process until finely ground. (You should have about 1 1/2 cups). Add butter and pulse until the mixture looks like wet sand.
  • Transfer mixture to a standard 9-inch pie plate. Using the bottom of a flat-bottomed measuring cup, press the mixture up the sides and into the bottom of the pie plate. Bake on the middle rack until dry and set, 20 to 25 minutes. (If the crust slumps or puffs while it bakes, gently press it back into place while still warm with the measuring cup and proceed.) Let cool completely.
  • Make the filling: Place 3 tablespoons cold water in a small bowl. Sprinkle gelatin over top and let stand until softened, about 5 minutes. In a large bowl, whisk together sour cream and vanilla until smooth. Combine cream, sugar and 1/4 teaspoon salt in a small pot and bring to a simmer over medium heat. Whisk in gelatin mixture until completely dissolved, then whisk cream mixture into sour cream. Pour filling into cooled crust and refrigerate until set, at least 2 hours and up to 2 days. (If making ahead, wrap tightly once set).
  • Toss strawberries with sugar, if needed, and let sit for 10 minutes. Pile strawberries and any accumulated juices on top of pie just before serving.

MISS AIMEE B'S CHOCOLATE STRAWBERRY PIE

This is an easy, wonderful tasting pie that has excellent presentation. Everyone raves when I make this pie! Miss Aimee B's is a local tea room that serves delicious desserts and this recipe came from one of their cook books. I am posting the recipe as given to me by a friend. I don't make the crust as it describes. Instead, I purchase a ready made oreo pie crust and then there's no baking involved. And it is much easier that way. But this is a delicious pie!!! Just remember that you must chill the filling in the pie crust for at least 8 hours. Just make it the night before, add strawberries and you're done!

Miss Aimee B's Chocolate Strawberry Pie image

Steps:

  • Preheat oven to 325 degrees.
  • To make crust: combine cookie crumbs, 3 T sugar and melted butter.
  • Press onto bottom and sides of a lightly greased 9 inch deep dish pie pan.
  • Bake in oven for 10 minutes, cool.
  • To make filling: Melt chocolate chips in the top of a double boiler, cool slightly.
  • Beat cream cheese until light and fluffy with electric mixer.
  • Add brown sugar and vanilla, mixing well.
  • Add chocolate to cream cheese mixture, mixing well.
  • Fold in the cool whip and mix again.
  • Spoon filling into cooled crust (or ready made chocolate crust) and smooth out top.
  • Cover tightly and chill at least 8 hours.
  • To finish the pie, wash strawberries, pat dry, and cut lenghtwise into 1/8 inch slices.
  • Arrange around the outside edge of pie, make a second row, overlapping.
  • Continue in this fashion until the entire pie has been covered.
  • Heat the 1/4 cup chocolate chips with the paraffin (or without paraffin).
  • Drizzle over the strawberries.
  • Chill and serve the same day.
