TASTY TACO CHOPPED SALAD

My friends and I love Mexican food, but we also try to eat healthy. My mom taught me how to make this tasty taco salad for my friends. -Matthew Smith, Knippa, Texas

Steps:

  • In a large skillet, cook beef over medium heat 6-8 minutes or until no longer pink, breaking into crumbles; drain. Stir in taco seasoning, water and beans; bring to a boil. Reduce heat; simmer, uncovered, 3-4 minutes or until thickened, stirring occasionally., Place remaining ingredients in separate bowls; combine with beef mixture as desired.

1 envelope reduced-sodium taco seasoning
2/3 cup water
1 can (15 ounces) Ranch Style beans (pinto beans in seasoned tomato sauce)
1 head iceberg lettuce, chopped (about 8 cups)
1 cup shredded Colby-Monterey Jack cheese
1 large tomato, chopped
2 cups corn chips
1/2 cup Catalina salad dressing

Steps:

  • Cook and stir chicken in nonstick skillet on medium heat 8 to 10 min. or until done. Add Seasoning Mix; cook as directed on package. Cool 10 min.
  • Toss lettuce with tomatoes, avocados, cheese, dressing and salsa in large bowl.
  • Crush 6 Tortilla Shells coarsely. Reserve remaining shells for another use. (See tip.) Add crushed shells to salad along with the chicken mixture; mix lightly.

  • Preheat grill to medium-high. Brush chicken all over with oil; season with salt and pepper. Oil grill. Grill chicken until cooked through, turning once, about 10 minutes total. Cut chicken into small cubes and refrigerate.
  • Brush corn with butter. Oil grill. Grill corn, turning occasionally, until just tender and slightly charred on all sides, 8 to 10 minutes total. Transfer corn to a cutting board to cool. When corn is cool enough to handle, use a sharp knife to carefully slice kernels off cob. Discard cob. Place kernels in a large bowl and refrigerate.
  • Blend mayonnaise, buttermilk, chipotle, adobo, cumin, cilantro, lime juice and 1/4 tsp. salt in a blender or food processor until smooth.
  • Place lettuce, chicken, tomatoes, avocado, onion and black beans in bowl with corn. Add dressing to taste and gently toss to coat. Season with salt and pepper. Top with chips and serve immediately.
