- In a small bowl, sprinkle gelatin over water; let stand 1 minute. In a saucepan, combine the sugar, cornstarch and salt. Stir in eggnog until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in gelatin until dissolved. Remove from the heat; cool to room temperature. , Stir in extracts; fold in whipped cream. Pour into crust. Refrigerate until firm. If desired, dust pie with cinnamon or nutmeg.

Steps:
- Spread pecans evenly in the bottom of pie shell.
- In a small saucepan, sprinkle gelatin over water; let stand 1 minute.
- Stir over low heat till completely dissolved.
- Stir in one cup of cream.
- Bring to a boiling point; put in a blender along with chocolate chips.
- Process until chocolate is melted.
- While processing, add 1/2 cup of cream, eggs and vanilla; process until blended.
- Pour into bowl and chill until thickened, about 15 minutes.
- In small pan combine caramels, 1/4 cup of cream and butter.
- Simmer, stirring occasionally, till caramels are melted.
- Pour onto crust.
- Let cool 10 minutes.
- With whisk or spoon, beat gelatin mixture till smooth.
- Pour into crust; chill till firm.
- Garnish with remaining cream, whipped.
WHITE CHRISTMAS PIE
This is a delicious, yet not-too-filling pie. It does remind you of a blanket of snow on Christmas morning.

- Sprinkle gelatin over cold water; set aside to soften.
- Combine 1/2 cup sugar, flour, and salt in a saucepan. Gradually stir in milk. Cook over low heat, stirring until it boils. Boil for 1 minute, and remove from heat. Transfer to a large bowl. Stir in softened gelatin. When partially set, beat with a rotary mixer until smooth. Blend in vanilla and 1 cup coconut.
- Whip the cream until stiff. Gently fold into coconut mixture.
- In a clean bowl, beat egg whites until frothy. Beat in cream of tartar and 1/2 cup sugar. Continue beating until egg whites form stiff peaks. Fold into coconut mixture. Pile filling into cooled pie shell. Sprinkle with additional coconut. Chill pie for at least 2 hours or overnight.

KNOX BLOCKS
Enjoy and old-fashioned favorite. I have loved Knox blocks since I was a kid and was surprised to not see a recipe here. So I thought I would add one. For those who don't know what Knox Blocks are they are the original Jello Jigglers and I think a little more tasty.

- Heat the Four Cups of Water Until Boiling.
- Combine the Jello and Gelatin together in a bowl.
- Pour in the water.
- Stir until completely dissolved.
- Pour into a glass dish or pan.
- Put in refrigerator about 2 hours to cool and set.
- When set cut into squares.
- How many you get depends on how large you cut them. You can also use cookie cutters for shapes.

MY GRANDMOTHER'S CHRISTMAS PIE - CHATTAVORE

- Preheat the oven to 375 degrees. Form the pie crust in the dish and press a sheet of aluminum foil into the crust. Fill with pie weights. Bake until light brown, about 25 minutes. Set on a cooling rack to cool completely.
- In a medium saucepan, combine 1 1/2 cups of the sugar, the flour, the gelatin, and the salt. Gradually whisk in the milk. Set over medium high heat and bring to a boil, stirring constantly. Once the mixture boils, boil it for one minute. Remove from heat and place into the ice bath. Stir from time to time and allow to cool until the mixture mounds slightly when dropped from a spoon (this took about ten minutes for me). Stir in the vanilla and almond extracts.
- In a stand mixer or using a hand mixer with a large bowl, beat the egg whites and cream of tartar on high until soft peaks form. With the beater still going, gradually pour in the remaining half cup of sugar. Beat until stiff peaks form. Fold the beaten egg whites into the milk mixture.
