HOLIDAY POTATO BAKE
I have made this at Thanksgiving and Christmas for the past several years; my family requests this dish all the time, even when it's not a holiday! Happy, cherished family memories. -Vickie West, Long Beach, California

Steps:
- Preheat oven to 350°. Place potatoes, carrots, celery and onion in a Dutch oven; add water to cover. Cook, covered, until vegetables are almost tender, 8-10 minutes. Drain. Return to Dutch oven; toss with 1-3/4 cups cheddar cheese, butter, cream cheese, 1/4 cup parsley, salt and pepper., Transfer to a greased 13x9-in. baking dish. Top with olives and remaining cheese. Bake, uncovered, until bubbly and cheese is melted, 15-20 minutes. To serve, sprinkle with remaining parsley.

- Cook and mash potatoes. Add all ingredients except butter and combine. Put into large greased casserole. Dot with butter. Bake, covered, at 350 F for 30 minutes.
HOLIDAY MASHED POTATOES
My mom passed this recipe on to me several years ago and I have been making it for every holiday dinner since. They can be made ahead, eliminating the need for mashing potatoes on the big day! I sprinkle a little paprika on top before baking to give it some color. Prep time does not include time it takes to boil the potatoes.

Steps:
- Beat hot potatoes until all lumps are removed.
- Add cream cheese (in small pieces) and the butter.
- Beat well until cheese and butter are completely melted and mixed.
- Stir in sour cream.
- Add eggs and onion to milk and add this to the potatoes with salt and pepper.
- Beat until light and fluffy.
- Place in a greased 9-inch casserole.
- Refrigerate several hours or overnight.
- Bake at 350 degrees for 1 hour or until lightly rounded on top (puffy).
