THE BEST CARAMEL APPLES

When I was searching for a recipe to make homemade caramel apples for the very first time, a close friend gave me this amazing and fairly easy recipe. My family and friends loved these delicious treats! Sprinkle with nuts or whatever you desire while the caramel is still warm (work quickly, the caramel sets VERY fast).

Steps:

  • Bring a large saucepan of water to a boil. Dip apples in boiling water for a few seconds, then dry with paper towels to remove any wax from the peels. Set apples aside; when completely cool, insert a wooden chopstick firmly into the bottom of each apple for a handle.
  • Line a baking sheet with parchment paper.
  • Stir butter, brown sugar, corn syrup, and sweetened condensed milk together in a saucepan over medium-high heat. Bring to a boil, stirring constantly, and reduce heat to medium. Cook until a candy thermometer reads 248 degrees F (120 degrees C), 25 to 30 minutes; stir constantly to prevent burning. A teaspoon of the syrup, dropped in a glass of cold water, should form a firm ball. Remove caramel from heat and stir in vanilla extract.
  • Working quickly, dip each apple into the hot caramel to completely coat the apple and about 1/2 inch of the wooden handle. Sprinkle apples with any desired toppings while still hot. Let caramel apples cool on the parchment paper. Use caution, caramel is very hot.

HOLIDAY CHOCOLATE CARAMEL APPPLES

I love caramel apples. But never had one layered with all these delicious flavors and then topped with candy and sprinkles. They were delicious! Steps:

  • 1. In a large double boiler melt caramel over medium heat. This will take about 45 minutes when using block caramel.
  • 2. While caramel is melting, wash apples and remove labels and stem. Dry well. Place sticks into top of apple. Push down firmly but do not go through bottom of apple. Set aside. Prepare Candi-Quik by breaking into smaller pieces.
  • 3. Place parchment paper on counter top, table or tray. When caramel is melted dip each apple up to stem area. Twirl to remove excess caramel. Transfer to parchment paper. Let set so caramel can harden about 30-45 minutes. While caramel is setting up, melt chocolate Candi-Quik in double boiler over medium-low heat. Be careful not to overheat or you will end up with "dull" chocolate.
  • 4. Pick apples up and trim excess caramel off the bottom where it has pooled. Kitchen shears work very well for this task. Place excess caramel back into double boiler for later use. Dip each apple into chocolate, twirl to remove excess chocolate. Set on clean sheets of parchment. While chocolate is setting up, melt white Candi-Quik in double boiler.
  • 5. Drizzle white chocolate onto one apple at a time and working quickly, sprinkle liberally with toffee bits. Place M&M's on wet chocolate. Sprinkle with decorative sprinkles. Repeat until all apples are completed.
  • 6. Place apple in a muffin top paper or pastry cups (found at Candy/Cake decor supply) Place apple into goody bag. Secure around stick with twisty tie, then tie with ribbon. Store in refrigerator for up to five days.
  • 7. Remove from refrigerator and allow to warm up a bit at room temperature before cutting into wedges.

10 very large apples, gala, envy, pacific rose. about 8 oz. each
2 1/2 lb block caramel, I use Peter's
2 lb chocolate cand-quik
1/2 lb white candi-quik
1 pkg holiday M&M's
1 pkg Heath toffee bits
1 bottle holiday sprinkles of choice-I used snowflakes and holly
10 7" caramel apple sticks
10 goodie bags and ribbon
10 muffin top papers

BUTTERY CARAMEL APPLE JAM

This recipe was inspired by others I had found online. They were very good but seemed to taste more like apple pie, so I changed it to be more like caramel. Hope you enjoy it.

Steps:

  • Sterilize the jars and lids in boiling water for at least 5 minutes.
  • Bring apples, water, and butter to a boil in a large pot. Reduce heat to low, cover, and simmer until apples are softened, about 8 minutes. Mix in brown sugar, white sugar, pectin powder, and butter flavoring. Bring to a full rolling boil, stirring often. Cook at a boil for 2 minutes without stirring.
  • Pack the apple jam into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 15 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Let stand 8 hours to overnight before use. Store in a cool, dark area; refrigerate opened jars.

APPLE JELLY

This delicate fruit preserve can help you use up your bounty of peak fall apples. A crystal clear jelly is what you are after here, so look for cooking apples - you want firm, crisp fruit that will hold up to stewing and straining without falling apart. Once the apples are cooked and their juices are extracted, the resulting jam is reminiscent of floral honey and tart citrus. Serve with a buttery croissant, warm toast, as a filling for pastries or a glaze for fruit tarts and cakes.

Steps:

  • Cut the apples into 1-inch pieces without peeling or coring, but discard any damaged or spoiled spots.
  • Place the apples in a large nonreactive pot and pour in 8 cups water. Bring to a boil over medium-high heat. Lower heat to maintain a simmer and cook without stirring until the apples soften, 35 to 40 minutes.
  • Remove from the heat. Set a fine-mesh sieve lined with cheesecloth or a muslin bag over another large pot, and pour the contents of the pot into the sieve. Do not press on the apples to prevent the jelly from becoming cloudy. You should have at least 7 cups of juice. Some apple varieties absorb more water and may need 2 to 8 hours for the juice to naturally strain out. If that's the case, refrigerate the pot.
  • Place a small plate in the freezer to use for testing the setting point of the jelly. Set the pot with the juice over medium-high heat. (Discard the fruit.) Add the sugar and lemon juice, and stir until the sugar is dissolved. Bring to a boil, skimming and discarding any foam that rises to the surface. Reduce the heat to medium and simmer until the liquid reduces by about three-quarters and a candy or deep-fry thermometer registers 225 degrees, 40 to 50 minutes. To test for doneness, spoon a small amount of liquid onto the cold plate from the freezer and return to the freezer to cool completely, about 2 minutes. Drag a spoon through the jelly. The setting point has been reached if it wrinkles and the wrinkles hold their shape. If they don't, continue to cook the jelly and test every few minutes on the cold plate.
  • Once the jelly is done cooking, add the salt, stir to dissolve and adjust with more lemon juice, if needed, for a nice balance of sweet and tart with a floral taste. Ladle the hot liquid into clean, sanitized jars, screw on the lids and follow steps to can, or allow to cool to room temperature and store in the refrigerator for up to 4 weeks.

3 1/2 pounds cooking apples, such as Granny Smith, Pink Lady, Jonagold, Braeburn or Honeycrisp, or a combination, scrubbed
4 cups granulated sugar
1/4 cup lemon juice (from about 2 lemons), plus more as needed
1/2 teaspoon kosher salt (Diamond Crystal)

  • In a large saucepan combine apples, 1/2 cup of the water, and the lemon juice. Bring mixture to boiling over medium-high heat, stirring constantly; reduce heat. Simmer, covered, for 25 to 30 minutes or until apples are very tender, stirring frequently. Press apples through a food mill or sieve until you have 5 cups pulp; discard skins.
  • Meanwhile, for caramel, pour granulated sugar into a 6- to 8-quart heavy pot, spreading evenly. Heat over medium-high heat until sugar begins to melt, shaking pot occasionally; do not stir. When the sugar starts to melt, reduce heat to medium-low and cook for 5 to 10 minutes or until all of the sugar is melted and golden, stirring as necessary with a wooden spoon. Remove from heat. Carefully add the remaining 3/4 cup water (caramel will spatter and become hard). Return to heat; cook and stir over medium heat until caramel is dissolved.
  • Carefully add the 5 cups apple pulp and brown sugar to caramel (again, caramel will spatter and become hard). Cook over medium heat until brown sugar and caramel are dissolved, stirring constantly. Increase heat to medium-high. Boil gently, uncovered, about 10 minutes or until mixture is thickened, stirring frequently. Remove from heat. Stir in butter and vanilla.
  • Ladle hot jam into hot sterilized half-pint canning jars, leaving a 1/4-inch headspace. Wipe jar rims; adjust lids and screw bands.

  • Notes on Temperature: I most often use a traditional jam pan which heats easily and requires lower cooking temperatures. [Heating instructions for a heavy bottomed 6-to-8-quart pot are italicized and in brackets.]
  • Before you start: If you want to preserve these jars for more than a few weeks in the fridge, have warm sterilized canning jars warming on the lowest setting in your oven. And prepare a hot water canning bath. Also, throw a small plate into the freezer to help test jam for doneness.
  • Before you prepare the caramel: Make sure the apples are peeled, cored, chopped into 1/4 to 1/2 inch pieces, and blended with lemon juice before starting to cook. Also, measure your water, brown sugar, optional spices, optional booze, and vanilla, so they're ready to go.
  • Pour the white sugar into a jam pan [or 6-to-8-quart heavy-bottomed pot] spreading the sugar evenly across the pan. Heat the sugar over medium-low [medium] heat, shaking the pot from time to time, WITHOUT STIRRING, until the sugar begins to melt. You will know the sugar has begun to melt when you see wisps of sugar beginning to clump together and become golden.
