Place the milk, mayonnaise, sour cream, blue cheese and garlic salt in a blender. Cover and process until smooth. Refrigerate until serving.

Beat first 4 ingredients until blended; gently stir in blue cheese and chives. Transfer to a serving bowl. If desired, sprinkle with pecans. Serve with apple and pear slices.

This recipe came from a friend of mine who teaches Home Ec. Its so rich and delicious. I love the chunky texture of this dressing. It also works nicely as a dip for vegetables. If you are as big a fan of blue cheese as I am, I think you will like this, too.

Steps:

1. Stir together buttermilk, sour cream, mayonnaise, vinegar, sugar, and garlic powder until well blended. Season to taste with salt and pepper. Set aside.
2. In a small bowl, mash blue cheese with a fork until mixture resembles very large-curd cottage cheese. Work until lumps are the size you prefer. Gently fold into set aside mixture. Chill and serve over green salad or as a dip for vegetables.

Steps:

Place the shallot, garlic, lemon juice, yogurt, mayonnaise, Gorgonzola, Tabasco, salt, and pepper in the bowl of a food processor fitted with the steel blade. Pulse the processor about 12 times, until the mixture is almost smooth but still a bit chunky. Add the chives and pulse two or three times, until combined. Transfer to a serving bowl, cover with plastic wrap, and chill for at least 2 hours to allow the flavors to develop. Serve with vegetables and/or crackers for dipping.

2 tablespoons freshly squeezed lemon juice
7 ounces Greek-style yogurt, such as Fage Total
1/2 cup good mayonnaise, such as Hellmann's

Combine mayonnaise, sour cream and buttermilk, mixing well.
Add remaining ingredients mixing thoroughly.
Must refrigerate for 24 hours before serving for best flavor.
